  • Total Time: 40 minutes plus 8+ hours marinating
  • Yield: 2 servings

Ingredients

Chicken and Vegetables

  • 2 lb boneless, skinless chicken thighs, cut into small chunks
  • 1 cup red onion and bell pepper (or any vegetables of choice), optional
  • Fresh parsley, lemon, and/or yogurt sauce to serve, optional
  • Garlic turmeric rice, naan, or salad to serve

Chicken Kebab Marinade

  • 1 cup plain yogurt (2% or full fat)
  • 6 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp tomato paste
  • 1 tbsp paprika
  • 1 tsp dried oregano or 1 tbsp fresh oregano
  • 1/2 tsp cumin
  • 2 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions

  1. Prepare the Marinade: In a large bowl, combine 1 cup of plain yogurt, 6 minced garlic cloves, 2 tablespoons olive oil, 2 tablespoons lemon juice, 2 tablespoons tomato paste, 1 tablespoon paprika, 1 teaspoon oregano, 1/2 teaspoon cumin, 2 teaspoons salt, and 1/2 teaspoon black pepper. Mix thoroughly until well blended.
  2. Marinate the Chicken and Vegetables: Add 2 pounds of chicken thigh chunks and 1 cup of red onion and bell pepper (or other vegetables if desired) to the marinade. Toss everything together ensuring all pieces are coated. Cover the bowl and refrigerate for at least 8 hours or overnight to allow the flavors to fully develop.
  3. Preheat the Oven: Set your oven to 450°F (230°C) and prepare a baking tray by lining it with aluminum foil or a broiler-safe liner to catch drips and ease cleanup.
  4. Assemble the Kebabs: Thread the marinated chicken pieces along with the vegetables onto metal skewers, alternating evenly to ensure balanced cooking.
  5. Bake the Kebabs: Place the skewers on the prepared baking tray and bake in the preheated oven for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C), ensuring the meat is fully cooked and juicy.
  6. Broil for Charred Finish: Switch the oven to broil and cook the kebabs for an additional 2-3 minutes. This step adds a lightly charred, smoky finish enhancing the flavor and texture.
  7. Serve and Garnish: Remove the kebabs from the oven and garnish with fresh parsley and lemon wedges if desired. Serve hot with garlic turmeric rice, naan bread, or fresh salad, alongside optional yogurt sauce for dipping. Enjoy your delicious and healthy homemade chicken kebabs!

Notes

  • For grilling, thread the kebabs and grill on medium-high heat for about 12-15 minutes, turning occasionally until cooked through and charred.
  • Marinating overnight enhances flavor and tenderness but a minimum of 8 hours is sufficient.
  • Use metal skewers as they conduct heat better, resulting in even cooking. If using wooden skewers, soak them in water for 30 minutes before using to prevent burning.
  • Adjust salt and spices to taste preferences.
  • Vegetables are optional but add color and additional flavor.
