Ingredients
Peach Filling
- 2 1/2 lbs fresh peaches, sliced (about 8 medium)
- 1/2 cup sugar
- 1/4 cup all-purpose flour
Biscuit Topping
- 2 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp kosher salt
- 6 tbsp unsalted butter, cold (3 oz)
- 1 1/3 cups whole milk
- 1-2 tbsp coarse sugar or granulated sugar (for sprinkling)
Instructions
- Preheat Oven: Preheat your oven to 350ºF (175ºC). Place a parchment-lined baking sheet on the lowest oven rack to catch any drips during baking, helping to keep your oven clean.
- Prepare Peach Filling: In a 1 1/2 quart baking dish (such as a deep-dish pie dish or an 8×8″ square pan), toss the sliced peaches with 1/2 cup sugar and 1/4 cup flour until evenly coated. This mixture will thicken as it bakes, creating a luscious fruit filling.
- Make Biscuit Topping Dry Mix: In a bowl, whisk together 2 1/4 cups flour, 1/4 cup granulated sugar, 1 tbsp baking powder, and 1/2 tsp kosher salt until combined.
- Add Butter to Dry Mix: Using the large holes of a box grater, grate the cold unsalted butter directly over the dry ingredients, then whisk briefly to combine. The grated butter creates a tender, flaky topping texture.
- Incorporate Milk: Pour in 1 1/3 cups whole milk and gently fold into the dry mix with a light hand until just combined. Be careful not to overmix to keep the topping soft and tender rather than tough.
- Assemble Cobbler: Spoon the biscuit topping in rough mounds over the peach filling in the baking dish. Sprinkle 1 to 2 tablespoons of coarse or granulated sugar over the biscuit topping for a slight crunch and extra sweetness.
- Bake: Place the baking dish on the prepared baking sheet and bake in the preheated oven for about 60 minutes. After 20 minutes, when the topping has turned a light golden color, tent loosely with aluminum foil to prevent overbrowning and continue baking for the remaining time until the peach filling is bubbling vigorously.
- Rest and Serve: Once baked, let the peach cobbler rest for 10 minutes before serving. This allows the filling to set slightly and makes it easier to serve.
Notes
- Use ripe but firm peaches for the best flavor and texture.
- Cold butter grated into the dry mix ensures a flaky biscuit crust.
- Do not overmix the biscuit topping batter to avoid toughness.
- Using a baking sheet under the cobbler helps catch drips and makes cleanup easier.
- Covering with foil mid-bake prevents the topping from burning before the filling is fully cooked.
- Resting the cobbler before serving improves sliceability and flavor melding.
