These easy keto cheeseburger pockets are a delicious low-carb twist on a classic favorite, featuring a savory ground beef and cheddar filling wrapped in a soft, crazy keto dough. With only 5g net carbs each, they are perfect for anyone following a ketogenic lifestyle and craving a satisfying, handheld meal or appetizer.

  • Total Time: 45 minutes
  • Yield: 3 cheeseburger pockets

Ingredients

Keto Dough

  • 1 batch Crazy Keto Dough
  • Egg wash (optional)
  • Sesame seeds to garnish (optional)

Cheeseburger Filling

  • 1 – 1 1/2 cups cooked ground beef
  • Pickles, sliced
  • Sharp cheddar cheese or cheese of choice
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Keto Cheeseburger Sauce (Optional, but highly recommended)

  • 120 g keto mayonnaise
  • 2 teaspoons mustard
  • 2-4 teaspoons pickle juice to taste
  • 1 teaspoon white wine vinegar to taste
  • 1 1/2 teaspoons paprika (sweet or smoked)
  • 1 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/4-1/2 teaspoon chipotle powder (optional)
  • Freshly ground black pepper to taste

Instructions

  1. Prepare Keto Dough: Whip up a batch of Crazy Keto Dough according to the recipe instructions. Allow the dough to rest for 10 minutes while you prepare the filling and other ingredients. The dough can also be refrigerated for up to 5 days if prepared in advance.
  2. Preheat Oven and Prepare Baking Tray: Preheat your oven to 350°F (180°C). Line a baking tray with parchment paper to prevent sticking.
  3. Shape Dough: Divide the rested dough into six balls, each about 1 1/4 inches or 30 grams. Roll each ball out between two sheets of parchment paper or use a tortilla press to a 5-inch diameter circle. For a neat appearance, trim the edges if desired. Use the dough immediately, as it dries out and becomes harder to seal after 10-15 minutes at room temperature.
  4. Assemble Cheeseburger Pockets: Layer the fillings starting with a layer of cheese on the center of the dough circle, then add cooked ground beef, sliced pickles, and more cheese on top. Season with kosher salt and freshly ground black pepper to taste. Fold the dough over and press the edges together, sealing about three-quarters of the edges, and then fill with more ground beef for a plump pocket. Fold or crimp the edges firmly using a fork to seal completely.
  5. Apply Egg Wash and Garnish: Place the assembled pockets on the prepared baking tray. Brush the tops with egg wash for a golden finish and sprinkle with sesame seeds if using.
  6. Bake: Bake the pockets in the preheated oven for 20-25 minutes until golden brown and cooked through.
  7. Serve and Store: Serve warm straight from the oven for the best flavor and texture. These pockets can be reheated well. For meal prepping, freeze the assembled pockets before baking for up to 3 months. Thaw in the refrigerator before baking as usual.

Notes

  • Use the dough immediately after rolling to ensure it seals properly; if it dries out, it becomes difficult to work with.
  • The keto cheeseburger sauce is optional but highly enhances the flavor, so don’t skip it!
  • Feel free to use any cheese of choice, but sharp cheddar adds a classic cheeseburger flavor.
  • Season the ground beef filling well with salt and pepper for the best taste.
  • These pockets freeze well unbaked; just thaw and bake when ready to enjoy.
  • Adjust spices in the sauce to suit your taste, especially the chipotle powder if you like a smoky kick.
