These Easy Roasted Potatoes are a simple, flavorful side dish featuring crispy golden potatoes coated in olive oil, garlic, and fresh chives. Perfectly seasoned and oven-roasted to a delightful crisp, they make an ideal accompaniment for any meal.

  • Total Time: 55-70 minutes
  • Yield: 6 servings

Ingredients

Potatoes

  • 3 pounds red or Yukon Gold potatoes (see notes)

Seasoning

  • 3 tablespoons extra virgin olive oil
  • 4-5 medium garlic cloves, minced
  • 1 1/2 teaspoons kosher salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste

Garnish

  • 2 tablespoons minced chives

Instructions

  1. Preheat the oven: Place an oven rack on the center shelf and preheat the oven to 400 degrees F. Line a sheet pan with foil or parchment paper to prevent sticking.
  2. Prepare the potatoes: Cut the potatoes in half or into quarters depending on their size, aiming for pieces that are evenly sized for consistent cooking. Place the cut potatoes in a large bowl.
  3. Season the potatoes: Add olive oil, minced garlic, kosher salt, and freshly ground black pepper to the bowl with potatoes. Toss thoroughly to ensure every piece is evenly coated with the seasoning mixture.
  4. Roast the potatoes: Spread the potatoes in a single layer on the prepared sheet pan. Place in the preheated oven and roast for 45-60 minutes, or until they are browned and crisp on the edges. Stir and flip the potatoes a couple of times during cooking with a spatula to promote even browning.
  5. Finish and serve: Remove the roasted potatoes from the oven once they are golden and crispy. Transfer to a serving bowl, toss with the minced chives, adjust seasoning if necessary, and serve immediately.
  6. Storage: Leftover roasted potatoes can be stored in an airtight container in the refrigerator for 3-5 days, making them convenient for meal prep or next-day enjoyment.

Notes

  • Red or Yukon Gold potatoes are preferred for roasting due to their waxy texture, which helps them stay crispy outside and tender inside.
  • Adjust the amount of garlic to taste for a milder or more robust garlic flavor.
  • For extra crispiness, soak cut potatoes in cold water for 30 minutes before cooking, then dry thoroughly.
  • Using parchment paper or foil makes cleanup easier and prevents sticking.
