These easy salmon patties are a quick and delicious way to enjoy canned salmon, featuring sautéed onions and bell peppers blended with breadcrumbs and seasonings, then pan-fried to a golden perfection. Perfect for a light meal or appetizer, these patties are flavorful, moist, and ready in just 40 minutes.

  • Total Time: 40 minutes
  • Yield: 14 servings

Ingredients

Salmon Patty Ingredients

  • 14-15 oz canned salmon or salmon in packets (well drained)
  • 1 medium yellow onion (1 cup, finely diced)
  • 1/2 red bell pepper (seeded and diced)
  • 1/2 cup Panko bread crumbs
  • 1 large egg (lightly beaten)
  • 2 Tbsp mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic salt (or substitute with 1/2 tsp fine sea salt and 1/4 tsp garlic powder, or season to taste)
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup parsley (finely minced)

Cooking Fats

  • 2 Tbsp olive oil (divided)
  • 2 Tbsp unsalted butter (divided)

Instructions

  1. Sauté Vegetables: Set a medium skillet over medium heat and add 1 tablespoon of olive oil and 1 tablespoon of unsalted butter. Once melted and hot, add the finely diced onion and red bell pepper. Sauté the mixture for 7-9 minutes until the vegetables are golden and softened. Remove the skillet from heat and set aside.
  2. Prepare Salmon Patties Mixture: In a large mixing bowl, combine the well-drained flaked salmon with the sautéed onion and bell pepper. Add the Panko bread crumbs, lightly beaten egg, mayonnaise, Worcestershire sauce, garlic salt, freshly ground black pepper, and finely minced parsley. Stir all ingredients gently but thoroughly to combine. Form the mixture into patties about a heaping tablespoon each, shaping them roughly 2 inches wide and 1/3 to 1/2 inch thick.
  3. Cook Salmon Patties: Heat the remaining 1 tablespoon of olive oil and 1 tablespoon of unsalted butter in a clean non-stick skillet over medium heat until hot. Add the salmon patties in a single layer, being careful not to overcrowd the pan. Sauté the patties for 3 to 4 minutes per side, or until they develop a golden-brown crust and are cooked through. If the patties brown too quickly, reduce the heat to prevent burning. Remove the cooked patties to a paper-towel-lined plate to drain excess oil. Repeat the cooking process with the remaining oil, butter, and patties until all are cooked.

Notes

  • The garlic salt can be substituted with a combination of fine sea salt and garlic powder to control sodium levels.
  • Make sure the canned salmon is well drained to avoid soggy patties.
  • Cooking oil and butter are divided to sauté vegetables first and to properly brown the patties without burning.
  • Adjust heat while frying to ensure patties cook evenly and develop a nice crust.
  • You can serve these patties with tartar sauce, lemon wedges, or a fresh salad for a complete meal.
