Ingredients
Potatoes
- 1½ pounds russet potatoes
Cooking Fats
- 2 tablespoons butter
- 2 tablespoons olive oil
Seasonings
- Pinch of cayenne pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon smoked paprika
- Salt and black pepper to taste
Optional Herbs and Aromatics
- Fresh rosemary (optional)
- Fresh thyme (optional)
- 1 garlic clove, smashed (optional)
Instructions
- Prepare Potatoes: Peel and quarter the russet potatoes. Place them on a microwave-safe plate, cover with a microwave lid, and microwave for 3½ to 4½ minutes. The potatoes should be tender with some resistance when pierced with a knife. Let them cool to room temperature or refrigerate if using later.
- Dice Potatoes: Once cooled, dice the quartered potatoes into roughly ½-inch pieces. This step is easier if the potatoes have chilled in the refrigerator.
- Infuse Oil and Butter: Heat a 12-inch or larger skillet over medium-high heat. Add butter, olive oil, and if using, fresh rosemary, thyme, and a smashed garlic clove. Allow butter to melt and the herbs to release their aroma, sizzling briefly. Remove and discard the herbs and garlic clove.
- Cook Potatoes: Add the diced potatoes in a single layer to the skillet. Season generously with salt, black pepper, cayenne, garlic powder, onion powder, and smoked paprika. Toss to coat evenly. Cook for 8-10 minutes, flipping and tossing every 2-3 minutes, until the potatoes develop a golden and crispy exterior.
- Serve: Taste and adjust seasoning as needed. Serve the breakfast potatoes immediately while hot and crispy.
Notes
- Microwaving the potatoes before skillet cooking reduces overall cooking time and ensures the potatoes are tender inside.
- Refrigerating the potatoes after microwaving helps them firm up, making dicing easier.
- Removing the herbs and garlic before cooking the potatoes prevents them from burning and imparting bitterness.
- You can customize seasoning amounts to your preference for heat and smokiness.
- This recipe pairs well with eggs, breakfast meats, or as a side for any morning meal.
