Ingredients
Salmon and Seasoning
- 3-4 salmon filets
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon pepper
Cooking Fats
- 1 tablespoon butter
- 1 tablespoon olive oil
Sauce Ingredients
- 1/2 medium yellow onion, diced
- 1/2 cup sun-dried tomatoes, drained and diced
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/3 cup freshly grated parmesan cheese
- 1/4 cup chicken broth
- 1 teaspoon dried basil
- 1 cup baby spinach
Garnish (optional)
- Fresh basil
- More parmesan cheese
Instructions
- Season the Salmon: Sprinkle the salmon filets evenly with garlic powder, paprika, salt, and pepper to flavor the fish.
- Heat the Skillet: In a large skillet or cast iron pan, melt the butter together with olive oil over medium heat until fully melted and combined.
- Cook the Salmon: Place the salmon filets skin side up in the skillet and cook for 4-5 minutes without moving to develop a sear. Flip the filets and continue cooking for another 4-5 minutes until the internal temperature reaches 145°F, ensuring the salmon is fully cooked but moist.
- Rest the Salmon: Remove the salmon from the pan and transfer to a plate to rest while you prepare the sauce.
- Sauté Vegetables: In the same skillet, add the diced onion and sun-dried tomatoes. Sauté over medium heat until the onions turn translucent and soft, about 3-4 minutes. Add the minced garlic and sauté for an additional one minute to release the aroma.
- Add Sauce Ingredients: Pour in the heavy cream, grated parmesan cheese, chicken broth, and dried basil. Stir well and cook the sauce for about one minute to meld flavors and slightly thicken.
- Wilt the Spinach: Stir in the baby spinach leaves and cook until wilted, which should take about 1-2 minutes.
- Combine Salmon and Sauce: Place the cooked salmon filets back into the skillet, spooning the creamy Tuscan sauce over each piece. Remove from heat immediately to avoid overcooking.
- Garnish: Optionally, garnish the salmon with fresh basil leaves and additional parmesan cheese for extra flavor and presentation.
- Serve: Serve the Tuscan salmon over a bed of mashed potatoes, penne pasta, or rice for a complete and satisfying meal.
Notes
- Ensure internal salmon temperature reaches 145°F for safe consumption and optimal texture.
- Use freshly grated parmesan cheese for the best flavor and melting consistency.
- Sun-dried tomatoes add a tangy depth; drain well to avoid excess moisture in the sauce.
- This dish pairs wonderfully with mashed potatoes, pasta, or steamed rice.
- Leftover sauce can be stored in the refrigerator for up to 2 days but avoid reheating salmon to prevent dryness.
- For a lighter version, substitute heavy cream with half-and-half or Greek yogurt, adjusting cooking time accordingly.
