These Eggnog Crepes are a festive and delicious treat perfect for the holiday season. Delicate, thin crepes are infused with rich eggnog flavor and topped with a creamy eggnog sauce, a dusting of powdered sugar, and vibrant pomegranate arils for added color and texture. The recipe combines classic French crepe technique with the comforting flavors of seasonal eggnog to create an elegant yet simple dessert or breakfast option.

  • Total Time: 1 hour 45 minutes
  • Yield: 6 servings

Ingredients

Eggnog Sauce

  • 3 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • pinch salt
  • 2 cups eggnog

Eggnog Crepes

  • 1 ½ cups all-purpose flour
  • ⅛ teaspoon granulated sugar
  • ⅛ teaspoon salt
  • 2 large eggs
  • 2 cups eggnog
  • ¼ cup milk
  • butter (melted, for cooking)
  • powdered sugar (for garnish)
  • pomegranate arils (for garnish)

Instructions

  1. Make the eggnog sauce: Combine the flour, sugar, and salt in a double boiler. Gradually whisk in the eggnog until smooth to avoid lumps in the sauce.
  2. Cook the sauce: Cook and stir the mixture over medium heat until it thickens, which should take about 8 minutes. Stir consistently to prevent burning.
  3. Cool and refrigerate sauce: Remove from heat and allow the sauce to cool slightly. Then cover and refrigerate it until ready to serve, allowing the flavors to meld and sauce to thicken further.
  4. Prepare crepe batter: In a large bowl, mix together the flour, sugar, and salt. Make a well in the center and crack in the eggs.
  5. Add liquids: Slowly whisk in the eggnog, then stir in the milk. Be careful not to overmix to keep the crepes tender.
  6. Refrigerate batter: Refrigerate the batter for at least one hour or up to overnight. Before cooking, stir gently and add a bit more milk if needed to reach the consistency similar to heavy cream.
  7. Heat skillet: Warm a crepe pan or 7-inch nonstick skillet over medium heat and brush lightly with melted butter to prevent sticking.
  8. Cook crepes: Pour 3 to 4 tablespoons of batter into the pan and quickly tilt and swirl the skillet to spread the batter evenly in a thin layer.
  9. Flip crepes: Cook for 1 to 2 minutes until the edges start to lift, then loosen with a spatula and flip carefully. Cook the other side for about 1 minute until lightly golden.
  10. Repeat cooking: Transfer the crepe to a plate and repeat the process with the remaining batter, brushing the pan with butter as needed between crepes.
  11. Serve: Top the warm crepes with the chilled eggnog sauce, sprinkle with powdered sugar, and garnish with pomegranate arils for a festive presentation.

Notes

  • Use a fine-mesh sieve when making the sauce to ensure it’s ultra smooth and free of lumps.
  • Refrigerating the batter rests the flour and helps develop flavor and texture for tender crepes.
  • If the batter thickens too much after refrigeration, thin it with a little milk to reach the right consistency.
  • Use a nonstick skillet or a dedicated crepe pan for easier flipping and thinner crepes.
  • Pomegranate arils add a refreshing tartness and a pop of color that contrasts beautifully with the creamy crepes and sauce.
