Eggs in Purgatory is a delicious and easy Italian-inspired dish featuring eggs poached in a spicy, flavorful tomato sauce with garlic, onions, chili flakes, and fresh basil. This hearty meal takes just 20 minutes to prepare and is perfect for breakfast, brunch, or a light dinner. Topped with parmesan cheese and served with toasted bread, it combines comforting textures and bright flavors in one pan.

  • Total Time: 20 minutes
  • Yield: 2 servings

Ingredients

Tomato Sauce

  • 2 tbsp extra virgin olive oil
  • 3 tbsp chopped white onion (cut into small pieces)
  • 2 garlic cloves (minced)
  • 1 14 oz can peeled plum tomatoes
  • 1/4 tsp chili flakes
  • 1 tbsp torn basil
  • salt and pepper to taste

Eggs & Topping

  • 4 eggs
  • 3 tbsp grated parmesan cheese, divided

To Serve

  • Toasted bread, as desired

Instructions

  1. Sauté aromatics: Heat olive oil in a medium-sized skillet over medium heat. When the oil shimmers, add the chopped onion and sauté for 1-2 minutes until soft but not fully cooked. Add minced garlic and chili flakes, continuing to sauté for another minute until fragrant.
  2. Prepare tomatoes: While the aromatics cook, pour the canned peeled plum tomatoes into a bowl and mash them roughly with a fork to break them up.
  3. Simmer tomato sauce: Add the mashed tomatoes to the skillet. Rinse the tomato can and the bowl, adding the rinsing water (about 1/2 cup) to the skillet as well. Season the sauce with salt and pepper. Let it cook uncovered, stirring occasionally, until thickened, about 10-15 minutes. Stir in torn fresh basil.
  4. Add eggs: Crack each egg into a small bowl, then create a small well in the tomato sauce and gently slide the egg into the well. Repeat for all 4 eggs. Sprinkle 1 tablespoon of parmesan cheese evenly over the eggs.
  5. Poach eggs: Cover the skillet partially and cook over medium-low heat for about 5 minutes, or until egg whites are set but yolks remain runny.
  6. Finish and serve: Sprinkle remaining parmesan cheese over the eggs along with additional cracked pepper and basil if desired. Serve hot with toasted bread on the side for dipping.

Notes

  • You can adjust the chili flakes to your preferred spice level or omit for a milder flavor.
  • For firmer yolks, cook eggs a couple of minutes longer.
  • Use good quality plum tomatoes for best flavor in the sauce.
  • Serve with crusty bread to soak up the delicious sauce.
  • This recipe can easily be doubled for more servings.
