Elote Sweet Corn Ribs are a flavorful twist on classic Mexican street corn, featuring sweet corn ears sliced into rib-like strips, brushed with chili-spiced avocado oil, oven-roasted to a perfect char, and topped with a zesty chipotle mayo, crumbled cotija cheese, fresh cilantro, and lime wedges for a vibrant, crowd-pleasing appetizer or side dish.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

For the Corn Ribs:

  • 4 ears sweet corn
  • 2 tablespoons avocado oil
  • 1 tablespoon chili powder
  • ½ teaspoon sea salt

For the Chipotle Sauce:

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 3 tablespoons adobo sauce
  • 1 tablespoon lime juice
  • Salt, to taste

For Garnish:

  • ½ cup crumbled cotija style cheese
  • ¼ cup minced cilantro
  • 2 limes, quartered (for serving)

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and prepare a large baking sheet by setting it aside for later use.
  2. Slice the Corn: Stand each ear of corn on its wide, flat end. Using a sharp knife, carefully slice vertically from top to bottom to cut each ear in half. Then, slice each half again to create four long strips or “ribs” from each ear.
  3. Prepare Chipotle Sauce: In a small bowl or jar, combine the mayonnaise, sour cream, adobo sauce, lime juice, and a pinch of salt. Mix well and refrigerate until ready to use, allowing flavors to meld.
  4. Mix the Chili Oil: In another small bowl, blend the avocado oil with chili powder and sea salt until well combined. This mixture will add a spicy and savory flavor to the corn.
  5. Brush and Roast the Corn: Arrange the corn ribs on the baking sheet in a single layer. Generously brush the chili oil mixture over all sides of the corn ribs. Place the baking sheet in the oven and roast for 20 minutes.
  6. Broil for Char: After roasting, switch the oven setting to broil on high. Broil the corn ribs for an additional 5 minutes or until slightly charred and caramelized in spots, enhancing the smoky flavor.
  7. Assemble and Serve: Remove the corn ribs from the oven. Spread or dollop the chipotle sauce over the top, then sprinkle evenly with crumbled cotija cheese and minced cilantro. Serve immediately with lime wedges to squeeze over the ribs for a fresh, tangy finish.

Notes

  • Use a sharp knife to safely cut the corn into ribs, ensuring clean cuts without damaging the cobs.
  • If you prefer less heat, reduce the amount of chili powder or adobo sauce in the recipe.
  • The chipotle sauce can be prepared a day in advance to deepen the flavor.
  • For a vegetarian option, ensure the cotija cheese is free of animal rennet or use a suitable substitute.
  • If cotija cheese is unavailable, feta cheese can be used as an alternative garnish.
