These delicious falafel burger patties are made from canned chickpeas and aromatic herbs, offering a nutritious and flavorful vegetarian meal in under 30 minutes. Served with a creamy herby tahini sauce and your favorite greens, these patties are perfect for a wholesome burger or as additions to salads and bowls.

  • Total Time: 25 minutes
  • Yield: 4 patties

Ingredients

Falafel Burger Patties

  • 14 oz can chickpeas, rinsed and drained very well
  • ½ cup packed cilantro
  • ½ cup packed parsley, curly or flat leaf
  • ½ small yellow onion, cut into chunks
  • ¼ cup chickpea flour
  • 2 cloves garlic
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ¾ teaspoon salt
  • Freshly cracked black pepper, to taste
  • ½ lemon, zest only (optional)
  • Avocado oil, for cooking

Herby Tahini Sauce

  • ½ cup fresh dill, fronds and tender stems
  • ⅓ cup tahini
  • 2 tablespoons water
  • 2 tablespoons freshly squeezed lemon juice
  • 1 clove garlic
  • ¼ teaspoon salt
  • Dried chile flakes, to taste

For Serving Burgers

  • 4 whole grain burger buns
  • Semi-firm vegan cheese (such as Spread ‘Em Kitchen)
  • Your favourite greens, or shredded red cabbage, pickled or fresh

Instructions

  1. Prepare the falafel mixture: In a food processor, pulse the onion, garlic, cilantro, and parsley until finely chopped. Add chickpeas, chickpea flour, cumin, coriander, salt, pepper, and lemon zest, and pulse until the mixture is about 50% blended, leaving it slightly chunky to help the patties hold together.
  2. Form the patties: Using your hands, firmly press and shape the mixture into 4 patties, each about 3-4 inches wide.
  3. Cook the patties: Heat a drizzle of avocado oil in a medium nonstick skillet over medium heat. Cook the burger patties until golden brown, about 5-6 minutes per side. Adjust the heat if they brown too quickly to ensure they cook through properly.
  4. Make the herby tahini sauce: Blend fresh dill, tahini, water, lemon juice, garlic, salt, and dried chile flakes until smooth using an immersion blender. If unavailable, finely mince the dill and garlic by hand and whisk together vigorously.
  5. Assemble and serve: Place the cooked patties on whole grain buns, add vegan cheese and your favorite greens or shredded cabbage. Drizzle with the herby tahini sauce. Alternatively, add patties and sauce to salads or grain bowls for a tasty meal.

Notes

  • Make sure to drain the chickpeas very well to avoid excess moisture in the patties.
  • Leaving the mixture slightly chunky helps the patties hold their shape better.
  • You can substitute chickpea flour with regular flour if unavailable, but chickpea flour adds extra binding and flavor.
  • Adjust the amount of chile flakes in the tahini sauce to your preferred level of spiciness.
  • These patties freeze well—cook in batches and freeze for quick meals later.
