- 2 tablespoons fresh lemon juice
- 1/4 cup chopped red onion
- 1/4 cup chopped pecans or walnuts
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese or goat cheese (optional)
For the Dressing:
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 2 teaspoons pure maple syrup
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Kosher salt and black pepper, to taste
Instructions
- Combine Salad Ingredients: In a large bowl, add the rinsed and drained chickpeas, chopped apple, chopped avocado, fresh lemon juice, chopped red onion, chopped pecans or walnuts, dried cranberries, and crumbled feta cheese if using. Gently toss to begin mixing the flavors.
- Prepare the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, pure maple syrup, Dijon mustard, and minced garlic. Add kosher salt and freshly ground black pepper to taste, and whisk until the dressing is well combined and smooth.
- Toss Salad with Dressing: Drizzle the prepared dressing over the salad ingredients in the large bowl. Carefully and gently stir everything together to evenly coat the salad with the dressing, ensuring all ingredients are well combined. Adjust seasoning with additional salt and pepper if needed.
- Serve Immediately: Serve the salad right away to enjoy the fresh textures of the apple and avocado. This salad is best consumed fresh for optimum taste and texture.
Notes
- This salad is best served fresh to maintain the creamy texture of the avocado and crispness of the apple.
- For a vegan version, omit the feta cheese or substitute with a vegan cheese alternative.
- You can swap pecans for walnuts or other nuts according to preference or availability.
- Use fresh lemon juice to prevent the avocado from browning.
- Store leftover dressing separately and toss salad just before serving to maintain freshness.
