Ingredients
Pasta
- 8 ounces pasta (such as farfalle, rigatoni, or penne)
Vegetables and Roasting
- 6 cups fresh, seasonal vegetables (such as bell peppers, zucchini, cherry tomatoes, asparagus, or any preferred mix)
- 3 cloves garlic
- A drizzle of olive oil
- Salt to taste
Walnut Pesto
- 1 cup walnuts
- 1 1/2 cups tightly packed basil leaves (or substitute with other fresh greens)
- 1/4 cup olive oil
- 1 very small clove garlic
- Juice of 1 lemon (or half a lemon if very juicy)
- 1/2 teaspoon kosher salt
Instructions
- Prepare the Veggies: Preheat your oven to 425°F (220°C). Arrange your fresh seasonal vegetables on a rimmed baking pan, drizzle them lightly with olive oil, and sprinkle with salt for seasoning.
- Roast Garlic: Peel the garlic cloves and place them in the center of a small piece of foil. Drizzle with olive oil, wrap it tightly, and place on the same baking pan with your vegetables. Roast everything for 20 to 30 minutes, depending on the veggies used, until tender. Once roasted, mash the garlic into a paste.
- Make Walnut Pesto: While the veggies roast, combine walnuts, basil leaves, a small clove of garlic, lemon juice, kosher salt, and olive oil in a food processor. Pulse until smooth and creamy but still textured.
- Cook Pasta: Cook the pasta according to package instructions until al dente. Drain well, toss with a little olive oil to prevent sticking, and set aside.
- Combine and Serve: Toss the pasta with the roasted vegetables and the roasted garlic paste. Serve with a generous scoop of the walnut pesto on top. This dish can be enjoyed hot or cold. Enjoy the vibrant flavors!
Notes
- Use any fresh, seasonal vegetables you prefer or have on hand; roasting times may vary slightly depending on vegetable density and cut size.
- The roasted garlic paste adds a mellow, sweet garlic flavor that blends beautifully with the pesto and veggies.
- The pesto can be adjusted with different herbs or nuts if desired.
- This dish can be served warm right out of the oven or chilled for a refreshing pasta salad variation.
