A flavorful and easy Fiesta Chicken Casserole combining rotini pasta, seasoned chicken, beans, corn, and cheese, all baked to bubbly perfection. This crowd-pleasing dish is perfect for weeknight dinners or casual gatherings.

  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

Main Ingredients

  • 2½ cups uncooked rotini pasta
  • 2½ cups cooked chicken
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups shredded cheese (divided)

Seasoning and Sauce

  • 1 cup sour cream
  • 1 cup salsa
  • 1 packet mild taco seasoning
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Other

  • Cooking spray

Instructions

  1. Preheat Oven and Prepare Dish: Heat the oven to 350°F (175°C). Lightly spray a 9×13 inch baking dish with cooking spray and set aside.
  2. Cook Pasta: Boil the rotini pasta in salted water (about 1 teaspoon salt) according to package directions until al dente. Drain but do not rinse.
  3. Mix Sauce and Spices: While pasta is cooking, in a large mixing bowl combine sour cream, salsa, mild taco seasoning, cumin, garlic powder, and onion powder. Stir until well blended.
  4. Combine Pasta and Filling: Add the drained pasta into the sour cream mixture and stir to coat evenly. Then fold in the drained corn, rinsed black beans, cooked chicken, and 1 cup of shredded cheese until everything is thoroughly mixed.
  5. Transfer to Baking Dish: Pour the mixture evenly into the prepared baking dish. Sprinkle the remaining 1 cup of shredded cheese on top. Cover the dish with tin foil.
  6. Bake: Bake covered for 20 minutes at 350°F. Then remove the tin foil and bake for an additional 5 minutes to allow the cheese topping to brown and bubble.
  7. Optional Garnishes and Serving: Garnish with optional sour cream, diced tomato, chopped cilantro, and avocado slices as desired. Serve warm. Leftovers can be stored covered in the refrigerator for 3-4 days.

Notes

  • Ensure pasta is cooked al dente to prevent overcooking in the casserole.
  • Do not rinse pasta after cooking, so sauce adheres better.
  • Use a mild taco seasoning for balanced flavor; adjust according to preference.
  • If desired, add fresh garnishes like cilantro and avocado for brightness.
  • Leftovers keep well refrigerated for up to 4 days; reheat thoroughly before serving.
