Ingredients
Ingredients
- 2 tablespoons olive oil
- 2 cups jasmine rice, rinsed and drained
- 2 cloves garlic, finely minced
- 1 teaspoon salt
- 1 1/3 cups water
- 1 (13.5 oz) can of full fat coconut milk
- 2 tablespoons thinly sliced scallions
Instructions
- Combine ingredients: Add the olive oil, rinsed jasmine rice, minced garlic, salt, water, and full fat coconut milk into a medium non-stick saucepan with a tight fitting lid.
- Cook the rice: Bring the mixture to a boil over medium-high heat. Once boiling, cover with the lid and reduce heat to low. Let the rice cook undisturbed for 15 minutes.
- Steam the rice: Remove the saucepan from heat but keep the lid on to allow the rice to continue steaming for an additional 5 to 10 minutes, ensuring it becomes tender and fluffy.
- Fluff and garnish: Use a fork to fluff the rice gently. Garnish with thinly sliced scallions before serving.
Notes
- For best results, rinse jasmine rice thoroughly to remove excess starch, which helps achieve fluffy texture.
- If you prefer a lighter coconut flavor, you can substitute part of the coconut milk with additional water.
- Make sure to use a tight-fitting lid to trap steam and cook the rice evenly.
- Allow the rice to rest off the heat to finish cooking and prevent it from becoming mushy.
- This rice pairs beautifully with Asian-inspired dishes, curries, or grilled proteins.
