Ingredients
Onion Jam:
- 3 tablespoons Olive Oil
- 8 Small Onions, thinly sliced
- 1 Rosemary Sprig
- 2 Bay Leaves
- 3 Thyme Sprigs
- ½ cup Brown Sugar
- ½ cup Red Wine
- 1 tablespoon Balsamic Vinegar
- 1 (10.5 ounce) can French Onion Soup
Grilled Cheese:
- 8 slices Thick Sliced Bread
- ½ cup Butter, softened
- 1 cup Gruyere Cheese, shredded
- 1 cup White Cheddar Cheese, shredded
- Onion Jam (from above)
- 3 tablespoons Grated Parmesan Cheese
Instructions
- Make the Onion Jam: Heat olive oil in a large skillet over medium heat. Add sliced onions, rosemary, bay leaves, and thyme. Cook, stirring occasionally, until onions are caramelized and golden brown, about 25-30 minutes.
- Add Sugar and Liquids: Stir in the brown sugar until dissolved. Pour in red wine and balsamic vinegar, cooking for another 2-3 minutes to deglaze the pan and blend flavors.
- Simmer to Thicken: Stir in the French onion soup and reduce heat to low. Let the mixture simmer for 20-30 minutes or until it thickens to a jam-like consistency. Remove the herbs and set the jam aside.
- Prepare Skillet for Grilling: Preheat a skillet or griddle over medium heat. Add 1 tablespoon of butter and let it melt to coat the surface.
- Assemble the Sandwich: Place one slice of bread on the skillet, sprinkle a layer of Gruyere cheese on top, add a generous helping of the prepared onion jam, then layer the white cheddar cheese. Top with the second slice of bread.
- Grill the Sandwich: Cook for 3-4 minutes until the bottom bread is golden and cheese starts to melt. Add more butter to the pan, carefully flip the sandwich, and grill for another 3-4 minutes until the other side is golden and cheese is melted through.
- Finish and Serve: Remove sandwich from heat and sprinkle both sides with grated Parmesan cheese. Repeat the process for remaining sandwiches. Slice each sandwich in half and serve hot for best enjoyment.
Notes
- Use thick-cut bread for the best grilled texture and sturdiness to hold the filling.
- Gruyere cheese melts well and adds an authentic, nutty flavor; white cheddar adds sharpness and balance.
- Caramelizing onions slowly is key — don’t rush to ensure full flavor development for the onion jam.
- The addition of herbs like rosemary, thyme, and bay leaves infuse aromatic depth into the onion jam.
- Adjust the amount of butter for grilling depending on your skillet to avoid sticking while achieving a golden crust.
- This sandwich pairs wonderfully with a light green salad or a cup of tomato soup.
