This French Peach Jam recipe is a classic and delightful homemade preserve made from fresh peaches, sugar, and lemon. It delivers a naturally sweet and tangy flavor with a smooth, spreadable texture achieved by simmering and blending the cooked fruit. Perfect for breakfast spreads, desserts, and gifting, this jam is preserved with a touch of rum in the lid to prevent mold, making it a delicious and elegant pantry staple.

  • Total Time: 1 hour
  • Yield: 3 servings

Ingredients

Fruit

  • 2.2 Pounds Fresh or Frozen Peaches

Other Ingredients

  • 3⅓ Cups Sugar
  • 1 Lemon (juice and halves)
  • Rum or other liquor (a few drops for jar lids)

Instructions

  1. Cut and Peel Peaches: Rinse the peaches and pat them dry. Cut each peach in half, remove the pits, then cut further into quarters and peel each piece carefully to prepare for cooking.
  2. Weigh Peaches: Weigh the peeled peach pieces to ensure you have the correct amount of fruit for the recipe.
  3. Combine Ingredients: In a large jam pan, add the peeled peaches, sugar, lemon juice, and the squeezed lemon halves. Stir well to combine all ingredients.
  4. Cook the Jam: Bring the mixture to a rolling boil over medium heat, then reduce to a simmer. Cook for 40 to 50 minutes or until the fruit turns glossy and translucent, stirring occasionally to prevent sticking.
  5. Blend the Jam: Remove and discard the lemon halves. Using a hand blender, blend the jam to your desired consistency, whether chunky or smooth.
  6. Simmer and Test for Set: Continue simmering the jam until it reaches the setting point. Test by dropping a small spoonful of hot jam onto an ice-cold plate; if it runs when the plate is tilted, cook further and retest until set.
  7. Prepare Jars: Before filling, add a few drops of rum or other liquor into the lids of your clean jars to prevent mold and germ growth.
  8. Fill Jars and Seal: Pour the hot peach jam into the jars, seal tightly with lids, then turn the jars upside down to create a vacuum seal.
  9. Store Properly: Keep the jars upside down for a few hours, then store them in a dry, cool place away from direct sunlight. In humid tropical climates, refrigerate the jam to ensure preservation.

Notes

  • Peel peaches carefully to avoid wasting fruit but ensure there is no tough skin left in the jam.
  • The setting test is crucial to get the perfect jam consistency; be patient and repeat the test if necessary.
  • The rum or liquor added to jar lids acts as a natural preservative to prevent mold growth.
  • If using frozen peaches, thaw and drain excess liquid before starting the recipe to avoid excess water in the jam.
  • Store jam in sterilized jars for safe preservation and longer shelf life.
