Fresh Broccoli Slaw with Raisins and Walnuts is a vibrant, crunchy salad combining toasted walnuts, broccoli florets, and sweet golden raisins, all brought together with a creamy, tangy dressing made from mayonnaise, lemon juice, and a touch of maple syrup. Perfect as a light side dish or a refreshing snack, this slaw delivers texture and flavor with wholesome ingredients.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

For the Salad

  • 3/4 cup (80 grams) Walnuts
  • 1 pound (475 grams) Fresh Broccolini (or broccoli)
  • 1 cup (135 grams) Golden Raisins
  • 1/3 cup (45 grams) Purple Onion, diced small

For the Dressing

  • 1/3 cup (130 grams) Mayonnaise (e.g., Vegenaise)
  • 1/4 cup (45 grams) Milk (plant or whole milk, cashew milk used)
  • 2 tablespoons Fresh Squeezed Lemon Juice
  • 1 teaspoon Maple Syrup
  • 1/2 teaspoon Sea Salt
  • Fresh Ground Black Pepper (to taste)

Instructions

  1. Toast the Walnuts: Heat a large skillet or cast iron pan over medium-low heat and add the walnuts. Toast them for 7 to 9 minutes, stirring and tossing frequently to prevent burning until they are fragrant and slightly darker. Alternatively, toast in a preheated oven at 325°F (162°C) for about 15 minutes. Let them cool, then roughly chop and set aside.
  2. Prepare the Broccoli: Trim the broccoli florets from the stalks and slice them thinly into bite-sized pieces, including any loose flowers and chopped leaves if fresh. Place these in a large mixing bowl.
  3. Grate the Stalks: Using a food processor with a coarse grater attachment, grate the broccoli stalks in batches and add them to the bowl with the florets and leaves.
  4. Add Remaining Salad Ingredients: Add the golden raisins, diced purple onion, and toasted walnuts to the broccoli mixture.
  5. Make the Dressing: In a small bowl, whisk together mayonnaise, milk, fresh lemon juice, maple syrup, and sea salt until smooth.
  6. Combine Salad and Dressing: Pour the dressing over the salad ingredients. Toss well to combine evenly. Season with fresh ground black pepper and adjust seasoning as needed by tasting.
  7. Chill and Serve: Cover the salad and refrigerate for at least one hour before serving to let flavors meld. The salad can be stored in the refrigerator for up to three days.

Notes

  • For best flavor, toast the walnuts just before preparing the salad.
  • If using broccoli instead of broccolini, ensure it is fresh and crisp for the best texture.
  • Fresh lemon zest can be added to the dressing for added citrus brightness.
  • Use mayonnaise alternatives like Vegenaise for a vegan dressing option.
  • Store any leftovers in an airtight container and consume within three days.
  • Adjust the lemon juice and syrup quantities to taste depending on preferred acidity and sweetness.
