Ingredients
For the Salad
- 4 ears fresh sweet corn, husks and silk removed
- 1 large English cucumber, quartered lengthwise and sliced (about 2 cups)
- 1 cup cherry tomatoes, halved or quartered
- 1/2 small sweet onion, thinly sliced (about 1/2 cup)
- 1/4 cup chopped or torn fresh basil
For the Vinaigrette
- 1/4 cup apple cider vinegar
- 2 tablespoons avocado oil
- 1 1/2 tablespoons honey
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon celery seed
Instructions
- Cook the Corn: Place the ears of corn on a microwave-safe plate and microwave for 3–4 minutes, or until just tender but still crisp. Allow the corn to cool enough to handle, then cut the kernels from the cobs. Alternatively, you can boil or roast the corn until tender-crisp.
- Combine Salad Ingredients: In a large bowl, add the cooked corn kernels, sliced cucumber, halved or quartered cherry tomatoes, thinly sliced sweet onion, and chopped or torn fresh basil.
- Prepare the Vinaigrette: In a small bowl or jar, combine apple cider vinegar, avocado oil, honey, salt, freshly ground black pepper, and celery seed. Whisk or shake until thoroughly combined.
- Toss the Salad: Pour the vinaigrette over the vegetable mixture and toss gently to combine all flavors evenly.
- Chill and Serve: Cover the bowl and refrigerate the salad for approximately 30 minutes to allow the flavors to meld. Before serving, toss the salad again and adjust the seasoning with additional salt, pepper, or honey to taste.
Notes
- Microwaving is the recommended quick method for cooking the corn, but boiling or roasting works equally well for tender-crisp kernels.
- Adjust the sweetness of the vinaigrette by varying the amount of honey according to your preference.
- This salad is best served chilled as a refreshing side dish during warm weather.
- Fresh basil can be substituted with fresh mint or parsley for a different aroma.
- To make it vegan, replace honey with maple syrup or agave nectar.
