This Fresh Green Bean Casserole is an elevated twist on the traditional holiday side dish, featuring crisp-tender fresh green beans and sautéed mushrooms in a creamy mushroom soup base. Packed with savory flavors and topped with crispy fried onions, it’s an irresistible addition to Thanksgiving or Christmas dinner that will delight your guests and leave them asking for seconds.

  • Total Time: 1 hour
  • Yield: 5 servings

Ingredients

Main Ingredients

  • 4 cups chicken broth
  • 3 heaping cups fresh green beans, trimmed and sliced in half
  • 3 tablespoons unsalted butter
  • 1/2 cup yellow onion, diced
  • 1 cup fresh mushrooms, sliced
  • 10.5 ounce can cream of mushroom soup
  • 2.8 ounce can fried onions
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly spray a large baking dish with nonstick cooking spray and set it aside to prepare for the casserole.
  2. Boil Green Beans: Bring 4 cups of chicken broth to a boil in a large saucepan. Add the trimmed and halved fresh green beans and boil them for 15 minutes or until they soften but still retain some crispness. Drain the green beans thoroughly.
  3. Sauté Vegetables: In a large skillet, melt 3 tablespoons of unsalted butter over medium heat. Add the diced yellow onions and sliced mushrooms, sautéing them for about 5 minutes until they are softened and fragrant.
  4. Combine Ingredients: Add the boiled green beans to the skillet along with 10.5 ounces of cream of mushroom soup, half of the fried onions from the 2.8-ounce can, 1/2 teaspoon garlic powder, and salt and pepper to taste. Stir well to combine all ingredients evenly.
  5. Assemble and Bake: Transfer the green bean mixture to the prepared baking dish, spreading it evenly. Sprinkle the remaining fried onions evenly on top. Bake in the preheated oven for 20 to 25 minutes, or until the casserole is bubbly and the onions are golden brown and crispy.

Notes

  • Using fresh green beans instead of canned provides a crisper texture and fresher flavor.
  • Be sure not to overcook the green beans during boiling; they should be tender but not mushy.
  • For a vegetarian version, substitute the chicken broth with vegetable broth and use a vegetarian mushroom soup.
  • Fried onions can be found in most grocery stores near the salad toppings or canned vegetables aisle.
  • This casserole can be prepared ahead of time up to the baking step and refrigerated for a few hours before baking.
