Deliciously rich and buttery Frosted Sugar Cookie Bars with a soft, tender crumb and a creamy, sweet almond-vanilla frosting. Perfect for sharing at parties or enjoying as a sweet treat, these bars combine classic sugar cookie flavors in an easy-to-make pan-baked dessert.

  • Total Time: 40 minutes
  • Yield: 24 servings

Ingredients

Cookie Dough

  • 2 cups butter (softened to room temperature)
  • 2 cups sugar (400g)
  • 2 eggs (large or extra large)
  • 2 teaspoons vanilla extract
  • 1 tablespoon almond extract
  • 6 cups flour (780g) (spooned lightly into the measuring cup and leveled with a knife)
  • 1 tablespoon baking powder
  • 1 teaspoon table salt

Frosting

  • 1 cup butter (softened to room temperature)
  • 3 cups powdered sugar
  • 1 teaspoon almond extract
  • 2-3 tablespoons milk (whole or evaporated, more if needed)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat and prepare baking pan: Preheat your oven to 350℉. Line a half sheet pan (13x18x1″) with parchment paper or spray it with non-stick cooking spray, and set aside.
  2. Cream butter and sugar: In the bowl of a stand mixer, beat together the softened butter and sugar until pale and fluffy, about 2 minutes.
  3. Add eggs and extracts: Add eggs one at a time, beating well after each addition, then incorporate the vanilla and almond extracts.
  4. Combine dry ingredients: In a separate medium bowl, whisk together the flour, baking powder, and salt. For best results, weigh the flour or lightly spoon and level it.
  5. Mix dry ingredients into wet: Gradually add the flour mixture to the creamed butter mixture, mixing a little at a time until fully combined.
  6. Press dough into pan: Drop spoonfuls of dough evenly over the prepared pan. Using clean hands and a piece of parchment on top, press and smooth the dough evenly across the pan.
  7. Bake: Bake for 20-25 minutes until edges show slight browning but the center is pale and set. Avoid over-baking.
  8. Cool completely: Remove pan from oven and let the cookie bars cool completely in the pan.
  9. Prepare frosting: Beat softened butter until fluffy, then gradually add powdered sugar until incorporated. Add almond and vanilla extracts. Slowly add milk, one tablespoon at a time, until reaching desired spreadable consistency. Add food coloring if desired.
  10. Frost bars: Once the cookie bars are fully cooled, spread the frosting evenly over the top. Sprinkle with colored sprinkles immediately if desired.
  11. Serve: Cut into squares to yield about 24 servings; can be divided into 40 smaller pieces for a lighter portion as these bars are rich.

Notes

  • For best results, weigh flour with a food scale or lightly spoon it into measuring cups and level with a knife.
  • Do not over-bake to keep bars soft and tender with a pale center.
  • You can use whole or evaporated milk for the frosting; add gradually to control consistency.
  • For an added touch, decorate with colorful sprinkles when frosting is freshly spread.
  • These bars are rich and sweet, so smaller serving sizes are recommended.
