4.2 from 1 review

A refreshing and colorful fruit salad featuring a vibrant mix of fresh pineapple, strawberries, kiwi, grapes, clementines, and blueberries, tossed in a zesty honey citrus dressing. Perfectly balanced with a touch of vanilla and citrus zest, this salad is quick to prepare and ideal for a healthy snack, brunch, or dessert.

  • Total Time: 20 minutes
  • Yield: 8 servings

Ingredients

Fruit

  • 2 cups cubed fresh pineapple
  • 2 cups thinly sliced strawberries (tops removed)
  • 1 cup thinly sliced kiwi (peeled, about 3 kiwis)
  • 2 cups seedless grapes (red or green)
  • 1 cup clementine oranges, peeled and segmented (about 3 clementines)
  • 2 cups blueberries (1 pint)

Dressing

  • 1/4 cup honey
  • 1 orange (1 tsp zest; 2 tbsp juice)
  • 1 lemon (1 tsp zest; 2 tbsp juice)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Make Dressing: Add honey, orange zest, lemon zest, orange juice, lemon juice, and optional vanilla extract to a wide-mouth mason jar. Shake vigorously to combine the ingredients, ensuring the honey is fully incorporated. Stir if necessary to prevent honey from settling at the bottom.
  2. Prepare Fruit: Thoroughly wash and dry all fresh fruit to help the dressing adhere better. Cube the pineapple into bite-sized pieces, thinly slice the strawberries and peeled kiwis, remove grapes from stems, and peel and segment the clementines.
  3. Chill Fruit (Optional): If time permits, place the prepared but undressed fruit in the refrigerator to chill, enhancing the refreshing nature of the salad.
  4. Assemble Salad: In a very large bowl, combine all the prepared fruit. Drizzle the honey citrus dressing over the fruit, starting with a light amount and adding more according to taste. Gently toss the salad to evenly coat all the fruit with the dressing.
  5. Serve: Serve the fruit salad immediately for the freshest taste or refrigerate for a short time to let the flavors meld. Stir gently before serving to redistribute the dressing.

Notes

  • Make sure all fruit is completely dry before adding dressing to help coating stick better.
  • Feel free to substitute or add other seasonal fruits based on availability and preference.
  • This salad is best enjoyed within a day for optimal freshness and texture.
  • Chilling the salad before serving enhances flavor melding but avoid soaking too long to prevent soggy fruit.
