Funeral Potatoes is a comforting, creamy, and cheesy casserole featuring tender hash browns baked with sour cream, cream cheese, and cheddar, topped with a buttery, crunchy cornflake crust. This classic American dish is perfect for family gatherings and potlucks due to its rich flavors and satisfying texture.

  • Total Time: 1 hour
  • Yield: 10 servings

Ingredients

Main Ingredients

  • ½ cup unsalted butter (melted)
  • 14.5 ounces cream of chicken soup
  • 1 ½ cups sour cream
  • 8 ounces cream cheese (softened)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¾ cup yellow onion (grated)
  • 2 cups cheddar cheese
  • 32 ounces package frozen shredded or cubed hash browns (thawed)

Topping

  • 2 ½ cups corn flakes (crushed)
  • ¼ cup unsalted butter (melted)

Instructions

  1. Thaw Hashbrowns: Remove the frozen hashbrowns from the freezer and thaw them in the refrigerator overnight to ensure even cooking and proper texture.
  2. Prepare Oven and Dish: Preheat your oven to 350℉ (175℃). Lightly coat a 9×13 inch baking dish with nonstick cooking spray to prevent sticking.
  3. Mix Base Ingredients: In a large mixing bowl, combine ½ cup melted butter, cream of chicken soup, sour cream, softened cream cheese, salt, black pepper, garlic powder, and grated yellow onion. Stir thoroughly until the mixture is smooth and well combined.
  4. Add Hashbrowns and Cheese: Fold in the thawed hashbrowns and 2 cups of cheddar cheese into the base mixture. Mix gently until all ingredients are evenly distributed, then transfer the mixture into the prepared baking dish, spreading it out evenly.
  5. Prepare the Topping: Crush the cornflakes inside a large freezer bag until they are finely broken up. Mix the crushed cornflakes with ¼ cup of melted butter until all pieces are coated with butter. Sprinkle this mixture evenly over the top of the hashbrown casserole.
  6. Bake: Place the baking dish uncovered in the preheated oven. Bake for 40 to 45 minutes, or until the casserole is bubbly and the topping is golden brown and crispy.

Notes

  • For a vegetarian version, substitute cream of chicken soup with a cream of mushroom or vegetable soup.
  • Make sure to thaw hashbrowns completely to avoid excess moisture during baking.
  • You can add cooked bacon or diced ham for extra flavor.
  • Use gluten-free cornflakes to make the dish gluten free.
  • Let the casserole rest for 5-10 minutes before serving to set properly.
