  • Total Time: 1 hour 50 minutes
  • Yield: 12 servings

Ingredients

Dough Ingredients

  • 4 1/2 tablespoons unsalted butter
  • 2 tablespoons minced garlic
  • 3 1/2 cups + 1 tablespoon all-purpose flour
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup whole or 2% milk (warmed to 110°F)
  • 1 large egg (room temperature)

Topping Ingredients

  • 1 beaten egg (for brushing the tops)
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt (for finishing)

Instructions

  1. Prepare the Baking Pan: Lightly butter the bottom and sides of a 9×13 inch baking pan to prevent the rolls from sticking, then set it aside.
  2. Make Garlic Butter for Dough: In a small pot, melt 4 1/2 tablespoons of unsalted butter and add 2 tablespoons of minced garlic. Cook over low heat for 1-2 minutes until the garlic is fragrant, then remove from heat and let it cool to room temperature while you prepare the dough ingredients.
  3. Mix and Knead the Dough: In a stand mixer bowl, combine 3 1/2 cups plus 1 tablespoon of all-purpose flour, 3 tablespoons chopped fresh parsley, 1 tablespoon sugar, 2 1/4 teaspoons instant yeast, and 1 teaspoon fine sea salt. Add 1 cup of warmed milk (110°F), 1 large room-temperature egg, and the cooled garlic butter. Using a dough hook, knead on low speed for 10-12 minutes until the dough is smooth and slightly tacky. Add flour one tablespoon at a time if too sticky.
  4. Shape the Rolls and First Rise: Divide the dough into 12 equal portions (about 67 grams each). Shape each piece into a smooth ball by pinching the seam at the bottom tightly. Arrange the rolls evenly in the prepared pan. Cover with plastic wrap or a kitchen towel and let them rise in a warm place until doubled in size, about 1-2 hours.
  5. Preheat the Oven: When the rolls have risen, preheat your oven to 350°F (180°C).
  6. Egg Wash and Bake: Brush the tops of the rolls gently with the beaten egg. Place the pan in the oven and bake for 20-30 minutes, or until the rolls have risen further and are golden brown on top.
  7. Prepare Garlic Butter Topping: While the rolls bake, melt 2 tablespoons of unsalted butter in a small pot and add 1 tablespoon minced garlic. Cook for 1-2 minutes until fragrant, remove from heat, and stir in 1 tablespoon chopped fresh parsley.
  8. Brush Rolls with Garlic Butter and Finish: Once baked, immediately brush the warm rolls generously with the prepared garlic butter. Sprinkle flaky sea salt over the tops for an extra burst of flavor. Serve the garlic bread rolls warm for best taste and texture.

Notes

  • Measure flour by spooning it into the cup and leveling it off for accuracy to avoid dense bread.
  • If dough feels too sticky while kneading, add additional flour one tablespoon at a time to get manageable dough consistency.
  • Use a kitchen scale for dividing dough portions equally to ensure uniform roll size and even baking.
  • Allow rolls to cool slightly after baking before serving to let flavors meld but enjoy warm for melt-in-mouth texture.
  • Optional: Use fresh herbs like rosemary or thyme to vary the herb flavor in the garlic butter topping.
