Ingredients
Salmon and Vegetables
- 4 (6 ounces each) salmon fillets
- 4 to 6 cups broccoli florets
- 4 cloves garlic, minced
Garlic Butter Sauce
- 6 tablespoons unsalted butter, melted
- 1 tablespoon light brown sugar
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- Salt and freshly ground black pepper, to taste
- 1 lemon, halved (divided)
Garnish
- Chopped fresh parsley
Instructions
- Preheat the Oven: Preheat your oven to 400˚F (204˚C) and grease a sheet pan with cooking spray to prevent sticking and make clean up easier.
- Prepare the Salmon and Broccoli: Arrange the broccoli florets and salmon fillets evenly on the sheet pan. Rub the minced garlic evenly over each salmon fillet to infuse flavor.
- Make the Garlic Butter Mixture: In a mixing bowl, whisk together the melted unsalted butter, light brown sugar, dried oregano, dried thyme, and dried rosemary until the ingredients are well combined.
- Coat the Salmon and Vegetables: Pour the butter and herb mixture evenly over the salmon fillets and broccoli, ensuring everything is well-coated for maximum flavor.
- Add Lemon and Seasoning: Squeeze the juice from half of the lemon over the coated salmon and broccoli. Then season everything with salt and freshly ground black pepper to taste.
- Bake: Place the sheet pan in the preheated oven and bake for about 15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145˚F (63˚C).
- Garnish and Serve: Remove the sheet pan from the oven. Garnish the finished dish with freshly chopped parsley and serve with the remaining lemon halves sliced on the side for extra zest.
Notes
- You can test the salmon’s doneness by gently flaking with a fork; it should separate easily when fully cooked.
- Feel free to substitute broccoli with other vegetables like asparagus or green beans.
- For a slightly sweeter touch, increase the brown sugar by up to another teaspoon.
- Using fresh herbs instead of dried can enhance the flavor but adjust quantities accordingly.
- Leftovers can be refrigerated for up to 2 days and reheated gently in the oven or microwave.
