Ingredients
Chicken
- 1 1/2 pounds boneless, skinless chicken thighs
- Kosher salt, to taste
- Ground black pepper, to taste
Sauce & Seasoning
- 3 teaspoons Dijon mustard
- 2 teaspoons honey
- 1/3 cup extra virgin olive oil
- 6 garlic cloves, minced
- 1 teaspoon ground coriander
- 3/4 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- Pinch of salt
Other
- 1 large yellow onion, roughly chopped
- Fresh parsley, chopped (for garnish)
Instructions
- Get ready. Preheat your oven to 425°F (220°C) to ensure it’s hot and ready for baking the chicken.
- Season the chicken. Remove the chicken thighs from the refrigerator and pat them dry with paper towels. Season both sides thoroughly with kosher salt and ground black pepper. Let the chicken rest for a few minutes while you prepare the sauce to allow the seasoning to absorb.
- Make the Garlic Dijon sauce. In a large mixing bowl, combine the Dijon mustard, honey, extra virgin olive oil, minced garlic, ground coriander, paprika, black pepper, cayenne pepper if using, and a pinch of salt. Whisk or stir until the ingredients are fully mixed into a smooth, flavorful sauce.
- Coat chicken in the sauce. Add a few chicken pieces at a time into the bowl with the sauce. Using tongs, thoroughly coat each piece with the sauce mixture ensuring an even layer. Transfer the coated chicken pieces to a lightly oiled cast iron skillet or baking sheet. Pour any remaining sauce over the chicken and arrange the roughly chopped onions on top or around the chicken pieces.
- Bake the chicken. Place the skillet or baking sheet in the preheated oven. Bake the chicken for about 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C), ensuring the thighs are fully cooked and juicy.
- Serve. Once cooked, remove the chicken from the oven. Garnish with freshly chopped parsley for a vibrant finish. Serve immediately with your preferred side dishes.
Notes
- For a spicier kick, keep the cayenne pepper. Omit it for milder flavors.
- Using a cast iron skillet helps achieve a crispy edge, but a baking sheet works well too.
- Patting the chicken dry before seasoning helps the sauce adhere better and improves browning.
- Leftovers can be refrigerated for up to 3 days and reheated gently to preserve moisture.
- Serve with rice, roasted vegetables, or a fresh salad to complete the meal.
