Ingredients
Cauliflower Rice:
- 1 large head of cauliflower (2 1/2 to 2 3/4 pounds)
- 3 tablespoons olive oil, divided
- Salt, to taste
Vegetables and Seasonings:
- 1 1/2 cups diced shallots (about 2 large shallots)
- 2 tablespoons minced ginger
- 4 stalks scallions, sliced
- 3/4 cup frozen peas, thawed
- 1 1/2 tablespoons soy sauce
- 1 1/2 teaspoons toasted sesame oil
Instructions
- Rice the Cauliflower: Peel off the outer leaves and trim the stem of the cauliflower. Cut into smaller florets, adding some florets to a food processor. Pulse until the pieces resemble rice grains. Transfer the riced cauliflower to a bowl and pulse the remaining florets in batches.
- Sauté the Cauliflower in Batches: Heat 1/2 tablespoon olive oil in a large pan over medium-high heat. Add half of the riced cauliflower with a pinch of salt and cook for about 3 minutes, stirring occasionally. Transfer to a bowl. Add another 1/2 tablespoon of olive oil to the pan, cook the remaining riced cauliflower with salt for another 3 minutes, then transfer to the same bowl. Turn off the heat.
- Sauté Shallots and Aromatics: Wipe down the pan and heat the remaining 2 tablespoons of olive oil over medium heat. Add diced shallots and sauté for 3 to 4 minutes until softened. Stir in minced ginger, sliced scallions, and thawed peas, cooking for an additional 2 minutes.
- Combine and Season: Return the cooked cauliflower rice to the pan and stir to combine all ingredients evenly. Season with soy sauce and toasted sesame oil. Taste and adjust salt as needed.
- Serve: Serve the cauliflower rice immediately as a flavorful and healthy side dish or light meal.
Notes
- Make sure not to over-pulse the cauliflower in the food processor to avoid a mushy texture.
- Use fresh ginger for the best aromatic flavor.
- To keep the cauliflower rice fluffy, cook in batches rather than all at once.
- You can add protein like tofu or chicken to make it a complete meal.
- For a gluten-free option, use tamari instead of soy sauce.
