Gingerbread Truffles are a delightful holiday treat combining the warm spiced flavor of gingersnap cookies with creamy full-fat cream cheese and a smooth white chocolate coating. Easy to prepare with just five ingredients, these bite-sized truffles make the perfect festive dessert or gift during the Christmas season.

  • Total Time: 1 hour 50 minutes
  • Yield: 20 truffles

Ingredients

Truffle Mixture

  • 1 bar (8 oz) full-fat cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups finely crushed gingersnap cookie crumbs (about 36 store-bought cookies)

Chocolate Coating and Garnish

  • 2 cups high quality white chocolate chips OR white melting wafers
  • Additional gingersnap cookie crumbs or festive sprinkles for garnish

Instructions

  1. Prepare the Cream Cheese Mixture: In a mixing bowl, add the softened cream cheese, granulated sugar, and vanilla extract. Use an electric hand mixer or stand mixer to beat the ingredients until the mixture is smooth and creamy.
  2. Add Crushed Cookies: Fold in the finely crushed gingersnap cookie crumbs into the cream cheese mixture and blend thoroughly. The mixture should be thick enough to hold its shape when rolled into balls.
  3. Form Truffle Balls: Use a 1 tablespoon cookie scoop to portion the mixture and roll each portion into a ball with clean hands. Place the truffle balls onto a parchment-lined baking sheet.
  4. Chill Truffles: Refrigerate the baking sheet with the truffles for 1 hour to firm up the truffle balls.
  5. Melt White Chocolate: Melt the white chocolate chips or melting wafers in a microwave-safe bowl at 30-second intervals, stirring between each, until fully melted and smooth.
  6. Dip Truffles: Using a plastic fork with the middle prongs removed or a dipping tool, dip each chilled truffle into the melted white chocolate to coat it evenly. Tap off excess chocolate gently against the side of the bowl.
  7. Add Garnish: Place the coated truffle back on parchment paper and immediately sprinkle with additional crushed gingersnap crumbs or festive sprinkles while the chocolate is still wet. Repeat with all truffles.
  8. Set the Coating: Return the coated truffles to the refrigerator for 30 minutes or until the white chocolate coating has fully set.
  9. Serve: Serve the gingerbread truffles chilled or at room temperature. They can safely be kept out for up to 2 hours before serving. Enjoy your festive treat!

Notes

  • Ensure the cream cheese is fully softened before mixing to achieve a smooth texture.
  • Use finely crushed gingersnap cookies to help the mixture bind properly and give a balanced gingerbread flavor.
  • When melting white chocolate, stir thoroughly after each interval to prevent burning.
  • If desired, substitute white chocolate chips with white melting wafers for easier melting and smoother coating.
  • Keep truffles refrigerated if not serving immediately to maintain firmness.
  • Additional garnishes like festive sprinkles add a colorful holiday touch and extra texture.
