Ingredients
Cookies
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- 1 2/3 cups all-purpose flour
- 1 1/2 teaspoons apple pie spice
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup apples, finely chopped
Glaze
- 1 1/4 cup powdered sugar
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon apple pie spice
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookies.
- Cream butter and sugar: In a large mixing bowl, using a hand mixer, cream together the softened unsalted butter and packed brown sugar until the mixture is smooth and butter is completely incorporated.
- Add egg and vanilla: Add the large egg and vanilla extract to the butter and sugar mixture. Mix well until the batter is smooth and uniform in texture.
- Incorporate dry ingredients: Add the all-purpose flour, salt, baking powder, and apple pie spice to the wet ingredients. Mix thoroughly until the flour is fully incorporated, scraping the sides of the bowl as needed.
- Fold in apples: Gently fold the finely chopped apples into the dough, ensuring even distribution without overmixing.
- Scoop cookies: Using a 2 tablespoon cookie scoop, drop cookie dough onto an ungreased baking sheet, spacing each cookie about 2 inches apart to allow room for spreading.
- Bake the cookies: Place the baking sheet in the preheated oven and bake for approximately 15 minutes or until the cookies turn golden brown around the edges.
- Prepare glaze: While the cookies bake, combine powdered sugar, milk, vanilla extract, and apple pie spice in a small bowl. Stir until smooth and set aside.
- Glaze warm cookies: Once cookies are baked, immediately glaze them while they are still warm to allow the glaze to soak in slightly.
- Cool: Allow cookies to cool for 5-10 minutes on the baking sheet, then transfer to wire racks to cool completely before serving or storing.
Notes
- Make sure the butter is softened to room temperature for easy creaming with sugar.
- Finely chopping the apples helps the cookies stay soft and evenly distribute apple flavor.
- If you don’t have apple pie spice, substitute with a mix of cinnamon, nutmeg, and allspice.
- Glazing the cookies while warm helps the glaze adhere better and melt lightly into the cookie surface.
- Store the cooled glazed cookies in an airtight container at room temperature for up to 3-4 days.
