Ingredients
Wet Ingredients
- ½ cup salted butter (113 grams, room temperature, European style recommended)
- 8 ounces cream cheese (227 grams, room temperature)
- 1 large egg (50 grams, room temperature)
- 1 teaspoon almond extract (4 grams)
Dry Ingredients
- 1½ cups granulated sugar (300 grams)
- 2¼ cups all-purpose flour (270 grams)
- 1 tablespoon baking powder (12 grams)
- ½ cup powdered sugar (57 grams, divided into ¼ cup for dough mix and ¼ cup for rolling)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the cookies.
- Cream Butter, Cream Cheese and Sugar: In a stand mixer fitted with the paddle attachment, beat together the butter, cream cheese, and granulated sugar until the mixture is smooth and creamy.
- Add Egg and Almond Extract: With the mixer running, add the egg and almond extract to the creamed mixture, blending well to combine all wet ingredients uniformly.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and ¼ cup of powdered sugar.
- Mix Dry and Wet Ingredients: Slowly add the flour mixture to the creamed wet ingredients on low speed until the dough is smooth and fully incorporated.
- Chill the Dough: Remove the dough from the mixer, cover it, and refrigerate for 30 minutes to firm it up for easier handling.
- Prepare for Baking: Line a baking sheet with nonstick parchment paper. Place the remaining ¼ cup powdered sugar into a shallow bowl for rolling the cookie dough.
- Scoop and Roll Dough: Using a 2-tablespoon cookie scoop, form dough balls and roll each ball completely in the powdered sugar to coat.
- Bake Cookies: Place cookies 6 at a time on the prepared baking sheet, spaced apart. Bake for 10-11 minutes until the tops are no longer wet and sides are firm but cookies remain soft and gooey inside. For an extra gooey texture, opt for the shorter baking time.
- Cool Cookies: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before serving.
Notes
- Use European-style butter for a richer flavor and better texture.
- Chilling the dough is essential to prevent spreading and to make rolling easier.
- For best results, do not overbake; cookies should be soft and gooey in the center.
- Rolling the dough in powdered sugar creates a beautiful crackly sugar coating and adds sweetness.
- Store cookies in an airtight container at room temperature for up to 3 days.
