This gourmet grilled cheese sandwich elevates a classic favorite with creamy melted brie, a sweet and tangy homemade blueberry compote infused with fresh thyme, and a sprinkle of flaky sea salt on golden toasted brioche bread. Perfect for brunch, an appetizer, or a decadent snack, this recipe combines sophisticated flavors for an irresistible sweet and savory bite.

  • Total Time: 15 minutes
  • Yield: 2 sandwiches

Ingredients

Blueberry Compote

  • 1 cup fresh blueberries (frozen works, thaw first)
  • 2 tablespoons sugar (adjust to taste)
  • 1 teaspoon lemon juice (fresh preferred)
  • 1 teaspoon fresh thyme leaves (plus sprigs for topping)

Sandwich

  • 4 slices brioche bread (thick cut, challah works too)
  • 6 ounces brie cheese (rind removed for better melting)
  • 3 tablespoons butter (softened, room temperature)
  • 0.5 teaspoon flaky sea salt (Maldon or similar)

Instructions

  1. Make the blueberry compote: In a small saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Cook for about 5 minutes, stirring occasionally, until the berries burst and the mixture thickens slightly. Remove from heat, stir in fresh thyme leaves, and set aside to cool slightly.
  2. Prepare the brie and bread: Slice the brie into thin pieces, removing the white rind to ensure better melting. Generously butter one side of each slice of brioche bread with softened butter.
  3. Assemble the sandwich: Place one slice of bread butter-side down in a cold nonstick skillet or cast iron pan. Layer an even amount of brie over the bread, then spoon a generous amount of the warm blueberry compote over the cheese. Add more brie on top to sandwich the compote, then place the second slice of bread on top with the butter side facing up.
  4. Cook the sandwich: Turn the heat to medium-low and cook for 3 to 4 minutes until the bottom bread slice is deep golden brown. Carefully flip the sandwich using a wide spatula, gently press down, and cook another 3 to 4 minutes until the second side is golden and the cheese has melted.
  5. Serve: Transfer the sandwich to a cutting board. Top with fresh thyme sprigs and a sprinkle of flaky sea salt. Cut diagonally and serve immediately for the best melt and flavor experience.

Notes

  • Use thick-cut brioche or challah bread for sturdy, buttery toasting.
  • Removing the brie rind helps the cheese melt smoothly but can be skipped if preferred.
  • Adjust the sugar in the compote to balance sweetness depending on blueberry ripeness.
  • Serve immediately after cooking to enjoy the melted cheese and warm compote.
  • For a dairy-free version, substitute brie with a vegan melting cheese and butter with plant-based alternatives.
