Ingredients
Dry Ingredients
- 1 cup rolled oats
- 1/4 cup pumpkin seeds
- 1/4 cup shredded coconut
- 1/4 cup currants
- 1 tablespoon chia seeds
- 1/2 teaspoon cinnamon
- Pinch of salt
Wet Ingredients
- 2 medium very ripe bananas (approximately 6 1/2 oz)
Instructions
- Preheat Oven: Preheat your oven to 345°F (310°F fan forced) and line a baking tray with parchment paper to prevent sticking.
- Mash Bananas: In a small bowl, mash the ripe bananas until smooth, which will act as the natural sweetener and binder for the cookies.
- Combine Ingredients: In a large bowl, mix together the rolled oats, pumpkin seeds, shredded coconut, currants, chia seeds, cinnamon, and salt.
- Add Banana: Add the mashed bananas to the dry ingredient mixture, stirring well to coat all the dry ingredients evenly.
- Let Batter Rest: Allow the mixture to sit for five minutes so the oats and seeds can absorb the moisture from the banana, which helps bind the cookies.
- Form Cookies: Take about a scant 1/4 cup of the mixture and press it together firmly into a round cookie shape. If it doesn’t hold together, wait a few more minutes and try again.
- Shape on Tray: Place the formed cookie on the lined tray and gently pat it until it’s about 2 3/4 inches wide and 1/2 inch thick. Remember, these cookies won’t spread during baking, so shape them carefully.
- Repeat: Repeat the process with the remaining mixture, spacing cookies adequately on the tray.
- Bake: Bake the cookies in the preheated oven for 15 to 20 minutes, or until they turn golden brown.
- Cool: Remove the cookies from the oven and transfer them to a cooling rack to cool completely before storing.
- Store or Freeze: Keep the cookies in an airtight container for up to two days or freeze them for longer storage, making them perfect for grab-and-go breakfasts.
Notes
- Bananas must be very ripe for optimal sweetness and binding.
- If the mixture doesn’t hold together when forming cookies, allow it to rest a bit longer as moisture absorption will improve binding.
- These cookies do not spread in the oven; shape them to your desired final size before baking.
- Freezing the cookies makes them easy to store and enjoy over time.
- Feel free to customize by adding nuts or other dried fruits as desired.
