Ingredients
Fish
- 4 cod filets
Vegetables & Add-ins
- 1 pint cherry tomatoes, halved
- 1 (14-ounce) can marinated quartered artichoke hearts, drained
- 1 small red onion, thinly sliced
- 1 cup olives (mix of Kalamata and Castelvetrano), pitted and halved
- 4 garlic cloves, minced
Seasonings & Oils
- 3 tablespoons extra-virgin olive oil
- 1 lemon, juiced (about 3 tablespoons juice)
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon paprika
- 1 teaspoon kosher salt
- ¼ teaspoon black pepper
Finishing Touches
- ¼ cup crumbled feta cheese
- 2 tablespoons roughly chopped fresh parsley
Instructions
- Combine the vegetables: Preheat your oven to 425°F (220°C). In a large baking dish, mix together the cherry tomatoes, marinated artichoke hearts, thinly sliced red onion, kalamata and Castelvetrano olives, minced garlic, olive oil, half of the lemon juice (about 1 ½ tablespoons), dried oregano, paprika, kosher salt, and black pepper until well combined.
- Roast the vegetables: Place the baking dish in the oven and roast the vegetable mixture for 12 to 15 minutes, until the tomatoes soften and become jammy, releasing their flavorful juices.
- Add the cod: Carefully remove the baking dish from the oven. Nestle the cod filets gently among the roasted vegetables. Drizzle a little extra olive oil over the fish, and season lightly with salt and black pepper. Scatter the crumbled feta cheese evenly around the fish.
- Bake the cod: Return the dish to the oven and bake for an additional 10 to 12 minutes, or until the cod flakes easily with a fork, indicating it is cooked through.
- Finish and serve: Remove from the oven and top the cod and vegetables with the chopped fresh parsley, a bit of lemon zest, and a final squeeze of fresh lemon juice. Serve immediately for a fresh, flavorful meal.
Notes
- For best flavor, use fresh cod filets and high quality extra-virgin olive oil.
- You can substitute other firm white fish like haddock or halibut if cod is unavailable.
- If you prefer a milder olive flavor, use just one type of olive such as Castelvetrano only.
- This dish pairs wonderfully with crusty bread, rice, or a simple green salad.
- To make it gluten-free, ensure canned artichokes and olives have no added gluten-containing ingredients.
