Greek Chicken Orzo Power Bowls combine tender, herb-seasoned chicken breasts with flavorful orzo pasta, fresh vegetables, creamy tzatziki, and tangy feta cheese to create a nutritious and satisfying Mediterranean-inspired meal perfect for quick lunches or dinners.

  • Total Time: 22 minutes
  • Yield: 6 servings

Ingredients

Orzo Pasta

  • 4 cups prepared orzo pasta
  • 2 tablespoons extra virgin olive oil

Chicken

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Vegetables & Garnishes

  • 1 medium cucumber, sliced and quartered
  • 2 large shallots, diced
  • 12 cherry tomatoes, halved or diced
  • 2 tablespoons lemon juice
  • 1 cup tzatziki sauce
  • 1/2 cup feta cheese, crumbled
  • 1 bunch fresh mint, for garnish (optional)

Instructions

  1. Prepare the Orzo: Cook the orzo pasta according to the package directions, usually boiling it in salted water until tender. Drain and set aside to cool slightly.
  2. Heat the Oil: In a large skillet or non-stick pan, heat the extra virgin olive oil over medium heat until shimmering.
  3. Cook the Chicken: Place the chicken breasts in the skillet. Sprinkle half of the dried oregano, basil, salt, and pepper evenly over the top. Cook for 6 to 8 minutes until the chicken starts to brown. Flip the chicken breasts, then sprinkle with the remaining herbs and seasonings. Continue cooking another 6 to 8 minutes or until the chicken is cooked through, juices run clear, and the exterior is golden brown. Remove from pan and let rest for 5 minutes before slicing thinly.
  4. Prepare the Vegetable Mix: In a bowl, combine the sliced and quartered cucumbers, diced shallots, and halved cherry tomatoes. Drizzle with lemon juice and season with salt and pepper to taste. Toss gently to combine.
  5. Assemble the Bowls: Divide the cooked orzo evenly into serving bowls, placing it as the base. Arrange the sliced chicken breast on top of the orzo. Add the vegetable mixture to each bowl around the chicken.
  6. Add Tzatziki and Feta: Spoon dollops of tzatziki sauce randomly around the bowl. Then, sprinkle crumbled feta cheese generously over the entire bowl.
  7. Garnish and Serve: Top each bowl with fresh mint sprigs for a burst of bright flavor and aroma if desired. Serve the power bowls immediately to enjoy the creamy, fresh, and savory Mediterranean flavors.

Notes

  • Orzo can be cooked in advance and chilled to save time during assembly.
  • Chicken breasts can be replaced with chicken thighs for juicier meat.
  • Adjust the amount of herbs and seasoning to your taste preferences.
  • Use store-bought tzatziki for convenience, or make homemade tzatziki for fresher flavor.
  • For a vegetarian version, replace chicken with grilled halloumi or roasted chickpeas.
