Ingredients
Potatoes
- 3 pounds Yukon Gold potatoes, scrubbed and cut into wedges
Seasonings & Liquids
- ½ cup extra virgin olive oil
- 4-5 garlic cloves, thinly sliced or minced
- 1 tablespoon dry Greek oregano
- 1 teaspoon sea salt
- ½ cup chicken stock (vegetable stock can be used as an alternative)
- 3 lemons, juiced
- 1 handful fresh oregano leaves
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for roasting the potatoes evenly.
- Prepare Potatoes: Place the potato wedges into a large baking dish ensuring they are spread out and do not overlap too much for proper roasting.
- Season Potatoes: Drizzle the extra virgin olive oil over the potatoes, then add the thinly sliced or minced garlic, dry Greek oregano, sea salt, and freshly ground black pepper. Mix everything thoroughly to coat the potatoes evenly with the oil and seasonings.
- Initial Baking: Place the baking dish with the potatoes into the preheated oven and bake for 15 minutes to start the roasting process.
- Add Stock and Continue Baking: Carefully add the chicken stock to the baking dish, then return it to the oven and bake for another 15 minutes. This step adds moisture and helps infuse flavor.
- Add Lemon Juice and Final Bake: Pour the freshly squeezed lemon juice over the potatoes, then bake for an additional 35 minutes or until the potatoes are fully cooked and have developed beautiful golden brown edges.
- Serve: Remove the potatoes from the oven and serve immediately on a platter. Spoon the lemon-garlic-olive sauce over the potatoes and sprinkle fresh oregano leaves on top for added aroma and freshness.
Notes
- Yukon Gold potatoes are preferred for their creamy texture and flavor, but you can substitute with other waxy potatoes.
- Feel free to use vegetable stock to make this dish vegetarian-friendly.
- Adjust the amount of garlic to your taste preference.
- Make sure not to overcrowd the baking dish to ensure even roasting.
- Fresh oregano leaves added at the end enhance the aroma and visual appeal.
- You can prepare this dish ahead, but roasting fresh just before serving provides the best texture and flavor.
