These lemon roasted Greek potatoes are perfectly crispy on the outside while remaining creamy and tender on the inside. Infused with fresh lemon juice, oregano, garlic, and a splash of chicken broth, they make an irresistible side dish that pairs wonderfully with a variety of meals, especially Mediterranean and Greek-inspired entrees.

  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

Potatoes

  • 3 pounds baby gold potatoes, halved or quartered to 1½- to 2-inches (Honey Gold Bite-Sized Potatoes recommended)

Marinade & Seasoning

  • ⅓ cup olive oil
  • ½ cup low-sodium chicken broth or vegetable broth for vegetarian option
  • 1 lemon, zested and juiced
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher or sea salt
  • ½ teaspoon garlic powder
  • Freshly ground black pepper, to taste

Garnish

  • 3 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven: Set your oven to 400 degrees Fahrenheit to ensure it reaches the right temperature while you prepare the potatoes.
  2. Prepare potatoes and marinade: Place the halved or quartered baby gold potatoes in a single layer on a large rimmed baking sheet. In a small bowl, whisk together the chicken broth, olive oil, lemon juice and zest, dried oregano, salt, garlic powder, and freshly ground black pepper until well combined.
  3. Toss and coat: Pour the marinade mixture over the potatoes on the baking sheet. Toss gently using a spatula or your hands to ensure all potatoes are evenly coated with the flavorful mixture.
  4. Roast the potatoes: Transfer the baking sheet to the preheated oven and roast the potatoes for 20 minutes initially.
  5. Toss and continue roasting: After 20 minutes, remove the baking sheet from the oven and toss the potatoes to redistribute them and their coating. Spread them out again evenly to ensure uniform roasting.
  6. Finish roasting: Return the baking sheet to the oven and roast for an additional 25 to 30 minutes or until the potatoes are tender when poked with a fork and have developed a golden brown, slightly crispy exterior.
  7. Garnish and serve: Once roasted perfectly, remove from the oven, sprinkle fresh chopped parsley over the potatoes, and serve warm as a delicious side accompaniment.

Notes

  • Look for 3-pound bags of baby gold potatoes in the produce section, which may also be labeled as creamer or new potatoes.
  • Baby potatoes have thin skins and do not need to be peeled before roasting, which helps retain nutrients and texture.
  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Adjust salt and garlic powder to your taste preferences.
