Ingredients
Base
- 2 flatbreads (store bought or homemade lavash)
- Extra virgin olive oil (for brushing)
Cheeses
- 6 ounces ricotta cheese
- 6 ounces feta cheese, crumbled
Toppings
- Dried oregano (to taste)
- 7 ounces marinated artichoke hearts, drained, patted dry, and sliced
- 1 handful baby spinach
- 1 Roma tomato, halved and sliced
- 1 small shallot, thinly sliced
- 6 pitted Kalamata olives, halved
- 1 handful sun-dried tomatoes, roughly chopped or sliced
Instructions
- Preheat and prepare oven: Set one oven rack near the center and another just a few inches below your broiler. Preheat oven to 375°F and line a baking sheet with parchment paper.
- Warm the flatbread: Place the flatbreads directly on the middle oven rack for 1 to 2 minutes to warm and slightly crisp them. Remove from oven and switch the oven setting to broil.
- Assemble the flatbread: Transfer the flatbreads to the prepared baking sheet and lightly brush with extra virgin olive oil. Spread ricotta cheese evenly on each flatbread, then crumble feta on top. Sprinkle generously with dried oregano. Arrange artichoke hearts, baby spinach, tomato slices, shallots, Kalamata olives, and sun-dried tomatoes evenly over each flatbread. Sprinkle with more oregano to finish.
- Broil the flatbread pizzas: Place the sheet pan on the top oven rack just a few inches away from the broiler. Broil for about 3 minutes, until the cheese softens and begins to melt. Watch carefully to avoid burning.
- Serve: Remove flatbread pizzas from oven, slice into portions, and enjoy warm.
Notes
- Using store-bought lavash or flatbreads saves prep time but homemade flatbread works beautifully.
- Keep a close eye while broiling as flatbreads can quickly burn.
- Feel free to add or substitute other Mediterranean toppings like roasted red peppers or capers.
- For a vegan version, substitute ricotta and feta with plant-based cheese alternatives.
- Serve with a drizzle of extra virgin olive oil or a squeeze of lemon juice for added brightness.
