This Grilled Cajun Chicken Sandwich recipe features tender, spiced chicken breasts cooked over a hot grill to perfection and assembled with fresh lettuce, tomato, red onion, and a spread of mayonnaise on toasted hamburger buns. Optional Pepperjack or Monterey Jack cheese adds a creamy, slightly spicy touch. A quick and flavorful meal that’s perfect for summer cookouts or casual weeknight dinners.

  • Total Time: 17 minutes
  • Yield: 4 sandwiches

Ingredients

For the Chicken

  • 4 boneless skinless chicken breasts
  • 2 Tablespoons olive oil
  • 4 teaspoons Cajun seasoning

For the Sandwiches

  • 4 large hamburger buns
  • Lettuce, washed and dried
  • Tomato, sliced
  • Red onion, sliced
  • Mayonnaise
  • 4 slices Pepperjack or Monterey Jack cheese (optional)

Instructions

  1. Preheat the Grill: Heat your grill to medium-high heat, ensuring it’s properly cleaned and oiled to prevent sticking.
  2. Prepare the Chicken: Place the chicken breasts on a baking sheet or large dish and pat dry with paper towels. Drizzle with olive oil and rub to evenly coat each piece, ensuring better adherence of the seasoning.
  3. Season the Chicken: Sprinkle half of the Cajun seasoning over the tops of the chicken breasts. Flip them over and coat the bottoms with the remaining seasoning, making sure each breast is evenly covered for maximum flavor.
  4. Grill the Chicken: Place the chicken breasts directly over the heated side of the grill. Grill for about 5-6 minutes per side, depending on thickness, until the internal temperature reaches 160°F measured with an instant-read thermometer. Alternatively, check doneness by cutting into the thickest part to confirm the meat is opaque or pressed for resistance. Once cooked, remove the chicken and let it rest for 5 minutes to retain juices.
  5. Toast the Buns: Heat a large pan or griddle over medium heat. Separate the top and bottom halves of the buns and spread mayonnaise on the cut sides. Place the buns mayonnaise-side down on the pan or griddle and toast until golden and slightly crispy, then remove and set aside.
  6. Assemble the Sandwiches: Layer each bottom bun with a grilled Cajun chicken breast, then add fresh lettuce, tomato slices, and red onion. Add a slice of cheese if desired and finish with more mayonnaise or aioli on the top bun. Serve the sandwiches immediately while warm.

Notes

  • For spicier sandwiches, increase the Cajun seasoning or add hot sauce.
  • Use a meat thermometer to ensure perfectly cooked chicken every time.
  • May substitute chicken breasts with boneless skinless thighs for juicier meat.
  • Cheese is optional but recommended for extra flavor and creaminess.
  • To keep sandwiches warm, wrap in foil after assembling until serving.
