Ideal for summer barbecues or a flavorful weeknight dinner.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Marinade and Shrimp

  • 1/4 cup Olive oil
  • 1/4 cup Fresh lime juice
  • 3 cloves Garlic, minced
  • 3 tbsp Honey
  • 2 tbsp Low-sodium soy sauce
  • 1 tbsp Chili garlic sauce or Sriracha
  • 2 lbs Shrimp, peeled and deveined

Garnish

  • 1/4 cup Fresh chopped cilantro
  • Serrano rounds, for garnish
  • Lime wedges, for serving

Instructions

  1. Soak Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill.
  2. Prepare Marinade and Marinate Shrimp: In a large bowl, combine olive oil, fresh lime juice, minced garlic, honey, low-sodium soy sauce, and chili garlic sauce or Sriracha. Remove about 1/4 cup of this marinade to use during grilling. Add the shrimp to the remaining marinade and toss well to coat. Allow the shrimp to marinate for a few minutes to absorb the flavors.
  3. Preheat Grill and Thread Shrimp: Preheat your grill to medium-high heat. Thread the marinated shrimp evenly onto the soaked skewers, taking care not to overcrowd them.
  4. Grill Shrimp: Place the shrimp skewers on the grill. Quickly brush them with the reserved marinade to enhance flavor and moisture. Cook shrimp for about 3 minutes per side until they are pink and opaque, being careful not to overcook.
  5. Serve and Garnish: Remove the shrimp from the grill and arrange on a serving platter. Garnish generously with fresh chopped cilantro, serrano slices for heat, and lime wedges for an added citrus zing.

Notes

  • Soaking wooden skewers helps prevent them from burning during grilling.
  • Shrimp cook very quickly; overcooking will result in rubbery texture.
  • Control the heat level by adjusting the amount of chili garlic sauce or substituting with less spicy options.
  • Can be served with rice, salad, or in tacos for a complete meal.
  • Ensure shrimp are peeled and deveined for better texture and taste.
