Ingredients
Produce
- 4 ears fresh corn, husks and silk removed
- 3 cloves garlic, finely minced
Dairy
- 4 tablespoons butter, softened
- crumbled goat cheese, for serving (optional)
Herbs & Spices
- 1 tablespoon dried oregano
- salt and fresh ground black pepper, to taste
Instructions
- Preheat the Grill: Set your grill to medium heat to prepare for cooking the corn evenly and thoroughly without burning.
- Prepare Foil Sheets: Cut four large sheets of aluminum foil, each big enough to wrap one ear of corn completely, ensuring easy wrapping and cooking.
- Wrap the Corn: Place each husked ear of corn in the center of a foil sheet and set aside to be buttered and sealed.
- Make Herb Butter: In a small bowl, combine softened butter with dried oregano, finely minced garlic, salt, and pepper. Mash the mixture well with the back of a fork until fully blended.
- Apply Herb Butter: Evenly brush the herb butter mixture all over each ear of corn to infuse flavor during grilling.
- Seal the Corn: Roll and fold the foil securely around each corn cob to create a tight packet that will lock in moisture and flavor.
- Grill the Corn: Place the foil-wrapped corn on the preheated grill and cook for 25 to 30 minutes. Turn each packet every 5 minutes to ensure all sides cook evenly and the corn becomes tender.
- Rest and Unwrap: Remove the cooked corn from the grill and let it rest for a few minutes. Carefully open the foil away from your face to avoid steam burns.
- Serve: Optionally sprinkle crumbled goat cheese over each ear for a creamy and tangy finish, then serve warm.
Notes
- You can substitute fresh oregano with other dried herbs like thyme or rosemary for different flavor profiles.
- For extra smoky flavor, add a dash of smoked paprika to the herb butter before grilling.
- If you don’t have a grill, you can cook the wrapped corn in a preheated oven at 400°F (200°C) for about 30 minutes.
- Be cautious when opening the foil packets after grilling as steam will be hot.
- Leftover grilled corn can be cut off the cob and added to salads or salsas.
