Ingredients
Chicken Wings
- 3 lbs frozen chicken wings (about 15 wings), thawed (fresh wings can also be used)
Seasoning Mix
- 3 tablespoons cornstarch
- 2 teaspoons onion salt (or regular table salt)
- 1 teaspoon smoked paprika (or sweet paprika for a hint of sweetness)
Optional Sauce
- 1/2 cup your favorite BBQ sauce
Instructions
- Dry the wings: With clean paper towels, pat the wings dry and place them in a large bowl to prepare them for the coating.
- Mix the seasoning: In a small bowl, combine the cornstarch, onion salt, and smoked paprika until evenly blended to create the seasoning mix.
- Coat the wings: Pour the seasoning mixture over the wings and toss well to coat each wing evenly, ensuring a crispy texture when grilled.
- Refrigerate: Place the coated wings in the refrigerator while the grill preheats, allowing the coating to set and adhere to the wings.
- Prepare the grill: Set up your grill for indirect heat and add smoking wood for additional flavor. Preheat the grill to 250°F to start slow cooking the wings.
- Cook on low heat: Place the wings on the grill away from direct flames and cook with the cover closed for 30 minutes to gently cook the meat through.
- Increase grill heat: Raise the grill temperature to 400°F and continue cooking the wings for an additional 15-20 minutes or until the internal temperature reaches at least 165°F, crisping the skin perfectly.
- Remove and serve: Take the wings off the grill and serve immediately. For extra flavor, toss the wings in your favorite BBQ sauce before serving.
Notes
- Thaw frozen wings completely before starting the recipe for even cooking.
- Using smoked paprika adds a nice smoky flavor, but sweet paprika can be used if preferred.
- Maintaining indirect heat during the initial cooking phase ensures tender wings without burning.
- Cooking times may vary depending on wing size and grill temperature accuracy.
- For a spicier kick, add cayenne pepper or chili powder to the seasoning mix.
- Always check internal temperature with a meat thermometer to ensure safe consumption.
