Ingredients
Steak Seasoning and Preparation
- 1 tbsp Ground paprika
- 2 tsp Onion powder
- 2 tsp Garlic powder
- 2 tsp Lemon-pepper seasoning
- 1 tsp Ground cumin
- 1/2 tsp Crushed red pepper flakes
- Kosher salt and pepper to taste
- 3 tbsp Olive oil
- 4 Boneless ribeye steaks
Grilled Peaches and Glaze
- 6 large Ripe peaches, pitted and halved
- 1/4 cup Balsamic vinegar
- 2 tbsp Fresh thyme leaves
- 1 tbsp Unsalted butter, melted
- 1 tsp Granulated sugar
- 1/2 tsp Black pepper
Instructions
- Prepare the Steaks: Thirty minutes before grilling, remove the ribeye steaks from the refrigerator and let them come to room temperature on a plate. This ensures even cooking and better texture.
- Make the Seasoning Rub: In a small bowl, mix together ground paprika, onion powder, garlic powder, lemon-pepper seasoning, ground cumin, crushed red pepper flakes, kosher salt, and black pepper. Brush both sides of the steaks with olive oil and generously rub the seasoning mixture onto each side to coat evenly.
- Grill the Steaks: Heat the grill to medium-high. Place the steaks on the grill and cook for 10 to 12 minutes total, turning once halfway through to achieve a nice char and desired doneness. Remove the steaks from the grill and let them rest for 5 minutes to redistribute the juices.
- Grill the Peaches: While the steaks rest, place the peach halves on the grill, cut side down. Grill for a few minutes until grill marks appear and the peaches soften slightly, then flip to grill the skin side briefly.
- Prepare the Peach Glaze: In a large bowl, whisk together balsamic vinegar, fresh thyme leaves, melted unsalted butter, granulated sugar, and black pepper. Toss the grilled peaches gently in this mixture to coat them evenly with the flavorful glaze.
- Serve and Enjoy: Arrange the grilled ribeye steaks on plates alongside the balsamic-glazed peaches. Serve immediately for a perfect combination of smoky, savory meat and sweet, tangy fruit.
Notes
- Allowing the steaks to come to room temperature helps them cook more evenly.
- Adjust the cooking time based on the steak thickness and your preferred doneness.
- Use ripe but firm peaches to prevent them from becoming mushy on the grill.
- For extra flavor, baste the steaks with melted butter or olive oil while grilling.
- Leftover grilled peaches can be refrigerated and used in salads or desserts.
