A flavorful and hearty Ground Beef and Sweet Potatoes Skillet dish, combining savory seasoned beef with tender sweet potatoes, poblano peppers, and corn. This one-pan meal is topped with melted cheese and fresh garnishes like cilantro, avocado, and sour cream for a comforting and satisfying dinner perfect for weeknights.

  • Total Time: 42 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 1 pound ground beef
  • ½ cup onion, diced
  • 2 cloves garlic, minced
  • 3 cups sweet potatoes, cubed (about 2 medium sized potatoes)
  • 2 tablespoons homemade taco seasoning (or 1 packet store bought)
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, seeded and diced
  • 1 cup shredded cheese (optional)

For Serving

  • Cilantro, chopped
  • Avocado slices
  • Sour cream

Instructions

  1. Cook the Beef and Onions: In a large skillet over medium heat, combine the ground beef and diced onions. Cook, stirring occasionally, until the beef is browned and fully cooked, about 10 minutes. Drain any excess fat from the skillet and return it to the heat.
  2. Add Vegetables and Seasoning: Stir in the minced garlic, cubed sweet potatoes, taco seasoning, water, frozen corn, and diced poblano pepper. Mix everything well to combine all flavors.
  3. Simmer Covered: Cover the skillet with a lid and cook on medium heat, allowing the sweet potatoes to soften, which should take about 12-15 minutes. Stir occasionally to prevent sticking and ensure even cooking.
  4. Reduce Liquid: Remove the lid and continue cooking on medium-low heat until the water has mostly evaporated, about 3 more minutes, stirring occasionally to prevent burning.
  5. Add Cheese and Garnish: If using, sprinkle shredded cheese evenly over the top of the skillet. Let it melt slightly, then garnish with freshly chopped cilantro, avocado slices, and a dollop of sour cream before serving.

Notes

  • For a spicier version, keep some seeds in the poblano or add a pinch of cayenne pepper to the taco seasoning.
  • You can substitute ground turkey or chicken for ground beef for a leaner option.
  • To keep it dairy-free, omit the cheese and sour cream or use plant-based alternatives.
  • This dish reheats well and can be stored in the refrigerator for up to 3 days.
  • Homemade taco seasoning can be made with chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
