  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Vegetables & Produce

  • 1 green bell pepper, sliced
  • 1/2 red onion, sliced
  • 3 to 4 cups chopped romaine lettuce
  • Corn salsa
  • Tomato salsa or pico de gallo
  • Guacamole or sliced avocado
  • Sour cream (optional)
  • Cilantro (optional)
  • Lime wedges (optional)

Protein & Dairy

  • 1 pound lean ground beef
  • 1/2 cup shredded white cheddar cheese

Pantry

  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons dried oregano
  • Pinch salt, plus more to taste
  • Ground black pepper, to taste
  • 2 tablespoons taco seasoning mix
  • 1/3 cup water
  • 1 1/2 cups steamed rice
  • 1 cup black beans, rinsed and drained

Instructions

  1. Sauté Peppers and Onions: In a large skillet, heat 1 tablespoon of extra virgin olive oil over medium-high heat until hot. Add the sliced green bell pepper and red onion. Season with 2 teaspoons dried oregano, a pinch of salt, and ground black pepper to taste. Cook for 5 to 6 minutes, stirring occasionally, until the vegetables are slightly softened but still tender-crisp. Transfer the cooked vegetables to a bowl and set aside.
  2. Cook Ground Beef: Using the same skillet, add 1 pound of lean ground beef. Cook the beef over medium-high heat until fully browned, breaking it apart with a spoon. Drain any excess grease from the skillet. Sprinkle in 2 tablespoons of taco seasoning mix and stir well to combine. Add 1/3 cup of water and stir again, allowing the mixture to simmer until most of the water is absorbed, about 2-3 minutes. Remove from heat.
  3. Assemble Burrito Bowls: Divide 3 to 4 cups of chopped romaine lettuce evenly among 4 serving bowls. Layer each bowl with 1 1/2 cups steamed rice and 1 cup rinsed black beans. Add the sautéed peppers and onions, seasoned ground beef, and 1/2 cup shredded white cheddar cheese. Top with corn salsa, tomato salsa or pico de gallo, and guacamole or sliced avocado. Optionally, garnish with sour cream, fresh cilantro, and lime wedges for extra flavor and freshness.

Notes

  • Use lean ground beef to reduce excess grease during cooking.
  • Adjust taco seasoning amount according to your preferred spice level.
  • Steamed rice can be prepared using white or brown rice based on preference.
  • For a vegetarian version, substitute ground beef with seasoned black beans or plant-based crumbles.
  • This recipe can be customized with additional toppings like jalapeños, chopped tomatoes, or shredded lettuce.
