Ingredients
Main Ingredients
- 8 6-inch corn tortillas
- 1 lb. 85% ground beef
- ½ medium yellow onion, diced
- 1 tablespoon tomato paste
- 1 tablespoon taco seasoning (homemade or store bought)
- 16 oz. salsa (~2 cups)
- 8 oz. taco skillet sauce (~1 cup; enchilada sauce can be used as a substitute)
- 8 oz. shredded cheddar cheese (~2 cups)
Garnishes (Optional)
- Guacamole
- Sour cream
- Pico de gallo
Instructions
- Preheat Oven: Preheat your oven to 350°F and prepare a 10-inch by 7-inch casserole dish by lightly greasing or spraying it. Set aside.
- Prepare Tortillas: Cut the corn tortillas in half, then further cut into approximately 2-inch strips. Set these aside for layering into the bake.
- Cook Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef to the skillet and begin browning it.
- Add Onion: Once the ground beef begins to brown, add the diced yellow onion. Continue cooking and stirring until the onion becomes translucent and the beef is fully cooked, about 4 to 5 minutes.
- Season Beef: Reduce heat to low. Stir in the tomato paste and taco seasoning until fully combined with the beef mixture.
- Combine Ingredients: Remove the skillet from heat. Add the salsa, taco skillet sauce (or enchilada sauce), and tortilla strips to the beef mixture. Stir thoroughly to combine all components well.
- Assemble in Casserole Dish: Pour the combined beef and tortilla mixture into the prepared casserole dish. Evenly sprinkle the shredded cheddar cheese over the top.
- Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Bake Uncovered: Remove the foil and bake for an additional 10 minutes to allow the cheese and casserole to brown and become golden on top.
- Serve: Once baked, remove from the oven. Garnish the taco bake with your favorite toppings such as guacamole, sour cream, and pico de gallo. Serve warm and enjoy!
Notes
- You can substitute enchilada sauce for the taco skillet sauce for a slightly different flavor.
- Use 85% lean ground beef for optimal flavor and texture.
- To make this dish spicier, add jalapeños or hot sauce to the beef mixture before baking.
- Leftovers store well in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven or microwave until warmed through.
