Ingredients
Meat and Vegetables
- 1 lb ground turkey (85%-93% lean)
- 1 medium sweet potato, peeled and diced into 1 inch cubes
- 1/2 red bell pepper, deseeded and chopped
- 1/2 green bell pepper, deseeded and chopped
- 1/4 onion, diced
Canned and Packaged Goods
- 1 can fire roasted diced tomatoes (approximately 14.5 oz)
- 6 oz corn (fresh or frozen)
- 6 oz black beans, drained and rinsed
Spices and Seasonings
- 2 tsp ground cumin
- 2 tsp chipotle chili powder
- 1 1/2 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Dairy and Garnish
- 1/2 cup shredded cheddar, Monterey Jack, or Mexican blend cheese
- 2 tbsp chopped fresh cilantro for garnish
Cooking Oil
- Avocado oil (quantity as needed for cooking, about 1-2 tbsp)
Instructions
- Brown the Turkey: Heat avocado oil in a large skillet over medium heat. Add the ground turkey and cook, crumbling it with a wooden spoon until browned and cooked through. Remove the turkey using a slotted spoon, leaving the rendered fat in the pan.
- Cook the Vegetables: Add the diced sweet potato, red and green bell peppers, and diced onion to the skillet. Cook over medium heat, stirring frequently, until the sweet potatoes are tender, about 8-10 minutes.
- Combine Ingredients: Return the browned ground turkey to the skillet. Add the can of fire-roasted diced tomatoes, corn, black beans, and all the spices (cumin, chipotle chili powder, chili powder, garlic powder, onion powder, salt, and black pepper). Stir everything thoroughly to combine the flavors.
- Melt the Cheese: Sprinkle the shredded cheese evenly over the mixture. Cover the skillet with a lid and cook on medium-low heat for 3-4 minutes, or until the cheese is fully melted.
- Garnish and Serve: Remove the skillet from heat, garnish with fresh chopped cilantro, and serve warm.
Notes
- Use avocado oil or any neutral oil with a high smoke point for best results when cooking the turkey and vegetables.
- For a spicier dish, increase the amount of chipotle chili powder or add diced jalapeños with the bell peppers.
- Black beans can be substituted with pinto beans if preferred.
- This recipe works well for meal prep; store in airtight containers and refrigerate for up to 4 days.
- To make this recipe dairy-free, omit the cheese or use a dairy-free cheese alternative.
- Make sure to rinse canned black beans to reduce sodium content.
