This Hamburger Potato Casserole is a comforting and hearty American dinner dish featuring layers of thinly sliced Yukon gold potatoes, ground beef, mushrooms, and a creamy mushroom soup mixture, all topped with sharp cheddar cheese and baked to golden perfection. It’s an easy-to-make casserole that’s perfect for family meals or casual entertaining.

  • Total Time: 1 hour 30 minutes
  • Yield: 8 servings

Ingredients

Meat and Vegetables

  • 1 lb lean ground beef
  • 1 cup chopped fresh mushrooms (cremini or white button)
  • 6 medium Yukon gold potatoes, peeled and thinly sliced (about 1/8-inch thick)

Seasonings and Condiments

  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 tsp Dijon mustard

Dairy

  • 3 cups shredded sharp cheddar cheese, divided
  • 1 tbsp butter (for greasing the dish)

Garnish (Optional)

  • Chopped parsley or chives

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly butter a 9×13-inch baking dish to prevent sticking.
  2. Cook Beef and Mushrooms: In a large skillet over medium heat, brown the ground beef and cook the chopped mushrooms until the beef is no longer pink and the mushrooms are soft, about 6 to 7 minutes. Stir in garlic powder, kosher salt, and black pepper. Drain any excess grease to keep the dish from being greasy.
  3. Mix Cream Sauce: Remove the skillet from heat. Stir in the cream of mushroom soup, sour cream, Dijon mustard, and 1 cup of shredded cheddar cheese until the mixture is smooth and creamy.
  4. Layer Ingredients: Reserve about 10 of the nicest potato slices for the top layer. In the buttered casserole dish, layer half of the remaining potatoes evenly. Then spread half of the beef and mushroom mixture over the potatoes, followed by 1 cup of shredded cheddar cheese. Repeat these layers with the remaining potatoes and beef mixture.
  5. Top the Casserole: Arrange the reserved potato slices neatly over the final beef layer. Sprinkle the remaining 1 cup of cheddar cheese evenly on top for a golden crust.
  6. Bake Covered: Cover the casserole tightly with aluminum foil and bake in the preheated oven for 45 minutes. This allows the potatoes to cook evenly and absorb flavors.
  7. Bake Uncovered: Remove the foil and continue baking for another 20 to 25 minutes, or until the potatoes are fork-tender and the cheese topping is golden brown and bubbly.
  8. Rest and Garnish: Let the casserole rest for 10 minutes after removing it from the oven. This helps it set for easier serving. Garnish with chopped parsley or chives if desired before serving.

Notes

  • Use Yukon gold potatoes for their creamy texture and excellent ability to hold shape during baking.
  • Make sure to slice the potatoes thinly (about 1/8 inch) for even cooking.
  • Drain the cooked ground beef well to avoid excess grease in the casserole.
  • The casserole can be prepared ahead up to the layering step, then refrigerated and baked before serving.
  • For a lower fat option, use reduced-fat sour cream and cheese.
