Ingredients
Main Ingredients
- 1 tablespoon cooking oil
- 1 pound ground beef (93/7 lean)
- ½ cup white onion, finely chopped
- 2 ¼ cups low-sodium beef broth
- ½ cup uncooked long grain white rice
- ¼ cup tomato paste
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon ground cumin
- ¼ teaspoon dried oregano
- ¼ teaspoon ground black pepper
- 1 ½ cups shredded sharp cheddar cheese
Instructions
- Cook the Beef and Onions: In a large skillet over medium heat, heat the cooking oil. Add the ground beef and finely chopped onions. Cook, stirring occasionally, until the beef is browned and no pink remains. Drain any excess grease from the skillet, then return the beef mixture to the pan.
- Add Broth, Rice, and Seasonings: Stir in the low-sodium beef broth, uncooked long grain white rice, tomato paste, onion powder, garlic powder, chili powder, salt, ground cumin, dried oregano, and ground black pepper. Mix well to combine all ingredients evenly.
- Simmer the Casserole: Bring the mixture to a boil. Once boiling, cover the skillet with a lid and reduce the heat to low, allowing it to simmer gently. Cook for 20 to 25 minutes, or until the rice is tender and has absorbed most of the liquid.
- Add Cheese and Melt: Remove the skillet from heat and uncover. Sprinkle the shredded sharp cheddar cheese evenly over the top of the casserole. Replace the lid and let it sit for a few minutes to allow the residual heat to melt the cheese thoroughly.
- Serve Warm: Once the cheese has melted, serve the hamburger rice casserole warm alongside your favorite side dish for a complete meal.
Notes
- Use lean ground beef (93/7) to reduce excess grease while maintaining flavor.
- Ensure the skillet is covered during simmering for even cooking of rice.
- You can substitute sharp cheddar cheese with a different cheese if preferred.
- Adjust seasoning to taste, especially salt depending on the broth’s sodium content.
- Leftovers can be refrigerated for up to 3 days and reheated comfortably in the microwave or on the stovetop.
