Ingredients
For the hash brown crust:
- 1 bag (20 oz) Simply Potatoes® Hash Browns, any variety
- 2 small eggs, or 1 large egg
- 1/2 cup shredded cheddar cheese
For the topping:
- 4-5 eggs
- 1 cup mozzarella or cheddar cheese
- 1/2 cup diced bell peppers, or sausage, bacon
- 1/8 cup diced onion (optional)
Instructions
- Preheat and prepare baking sheet: Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper, aluminum foil, or use a cookie sheet, then lightly grease it with oil to prevent sticking. Set aside for later.
- Make the hash brown crust: In a large bowl, thoroughly combine the hash browns, eggs, and shredded cheddar cheese until the mixture is well blended. Transfer this mixture onto the greased baking sheet and shape it into a circle or oval to form the pizza crust.
- Bake the crust: Place the crust in the preheated oven and bake for about 20 minutes or until the crust turns golden brown and starts to crisp.
- Prepare toppings while crust bakes: While the crust is baking, prepare your toppings by dicing bell peppers, sausage, bacon, or onions as desired. Beat the 4-5 eggs if using as a topping or add them directly to the pizza as whole or scrambled eggs.
- Add toppings and finish baking: Remove the crust from the oven once golden, then evenly spread the cheese and toppings (eggs, bell peppers, sausage, bacon, onions) over the crust. Return the pizza to the oven and bake for an additional 12-15 minutes, or until the eggs are cooked through to your preferred doneness.
- Cool and serve: Allow the breakfast pizza to cool for about 5 minutes before slicing. Serve hot to enjoy the crispy crust and melty, savory toppings at their best.
Notes
- Choose your favorite variety of hash browns for different textures and flavors.
- Use baking parchment for easier cleanup and to prevent sticking.
- You can substitute the cheddar cheese in the crust or topping with your favorite cheese variety like Monterey Jack or Gouda.
- Add cooked sausage or bacon for a meatier breakfast pizza.
- Adjust the number of eggs in the topping section depending on how eggy you want your pizza.
- For extra crispiness, broil the pizza for 1-2 minutes at the end, watching closely to prevent burning.
