This Healthier Strawberry Peach Crisp with Oats is a delightful and nutritious twist on a classic dessert. Featuring ripe peaches and fresh strawberries coated in a maple syrup and cinnamon mixture, topped with a crunchy, oat-based pecan and walnut crumble, this crisp is baked to perfection for a warm, bubbly finish. Perfect for a wholesome treat, it pairs wonderfully with plain Greek yogurt, ice cream, or a dairy-free alternative.

  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

Fruit Mixture

  • 5 medium-sized peaches, sliced (ensure peaches are ripe)
  • 2 cups strawberries, sliced
  • 2 Tbsp maple syrup (adjust to taste)
  • 2 Tbsp cornstarch
  • 1/2 tsp ground cinnamon

Topping

  • 1/2 cup pecans, chopped
  • 1/2 cup walnuts, chopped
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1 tsp ground cinnamon
  • Pinch sea salt
  • 3 Tbsp coconut oil, melted
  • 2 Tbsp maple syrup
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the crisp.
  2. Prepare Fruit: Wash and dry the peaches and strawberries. Remove the pits from the peaches and slice them into sixths; quarter the strawberries after removing stems. Place the fruit into a large mixing bowl. Chop pecans and walnuts into small pieces for the topping.
  3. Coat Fruit: Add maple syrup, cornstarch, and 1/2 teaspoon ground cinnamon to the sliced fruit. Stir thoroughly until the fruit is evenly coated. Transfer this fruit mixture into a 9×6 inch pie dish or medium baking dish and set aside.
  4. Mix Dry Topping: In a large bowl, combine the chopped nuts, rolled oats, almond flour, 1 teaspoon ground cinnamon, and a pinch of sea salt. Stir to blend evenly.
  5. Prepare Wet Topping Mixture: Melt the coconut oil in the microwave. To the melted oil, add vanilla extract and maple syrup, stirring well. Pour this wet mixture over the dry topping ingredients and mix until fully combined, ensuring the topping is moist.
  6. Assemble and Bake: Evenly spread the topping mixture over the fruit in the baking dish. Place the dish in the preheated oven and bake for approximately 40 minutes until the topping is golden brown and the fruit is bubbling.
  7. Cool and Serve: Remove the crisp from the oven and allow it to cool for about 10 minutes. Serve warm, ideally accompanied by a dollop of plain Greek yogurt, ice cream, or a dairy-free alternative.

Notes

  • You can adjust the amount of maple syrup to suit your preferred sweetness level.
  • Ensure peaches are ripe for the best flavor and texture.
  • Store leftovers covered in the refrigerator and consume within 2-3 days.
  • This crisp is delicious served warm but can also be enjoyed at room temperature.
  • For a nut-free version, substitute nuts with additional oats or seeds.
  • Using almond flour adds a gluten-free aspect but adjust accordingly if strict gluten sensitivity is a concern.
